Ingredients:
Prepare Chicken Menchi Katsu:
-Boneless Chicken cubes 300g
-Kali mirch (Black pepper) crushed 1 & ½ tsp
-Chicken powder 1 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Iodized Himalayan pink salt 1 tsp or to taste
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Soy sauce 1 tbs
-Mozzarella cheese (cube)
-Cooking oil (For greasing hands) ½ tsp
-Maida (All-purpose flour) as required
-Anda (Egg) whisked
-Breadcrumbs as required
-Cooking oil (For Frying)
Prepare sauce:
-Cooking oil 1 tbs
-Tomato paste 1 tbs
-Chicken stock 1 & ½ cup (Dissolve 1-2 chicken cubes in 1 & ½ Cup of water)
-Kali mirch (Black pepper) crushed 1 tsp
-Onion powder ½ tsp
-Cayenne pepper powder ½ tsp
-Bareek cheeni (Caster sugar) 1/8 tsp
-Soy sauce 1 tsp
-Rice vinegar ½ tsp
-Worcestershire sauce 1 tsp
-Gajar (Carrot) diced ½ Cup
-Pyaz (Onion) diced ⅓ cup
-Cornflour 1 & ½ tsp
-Water 1 tbs
Assembling:
-Boiled rice
-Cheese slice
-Cheese
-Hara pyaz (Spring onion)
-Til (Sesame seeds)
Direction:
Prepare Chicken Menchi Katsu:
-In a chopper, add black pepper crushed, chicken powder, red chilli crushed, pink salt, ginger garlic paste, soy sauce, & chop well.
-Take out 50g of chicken mixture, flatten it, place mozzarella cheese cube, take another 50g of chicken mixture, flatten it and place it over mozzarella cheese cube, seal the corners & make a patty.
-Coat chicken patty with all-purpose flour, whisked egg, & breadcrumbs. (Makes 3-4)
-In a wok, add cooking oil, heat it. (120 °C)
-Add prepared chicken patty, fry on low flame until golden & crispy.
Prepare Sauce:
-In a pan, add cooking oil & heat it.
-Add tomato paste, mix well, add chicken stock, mix well, bring it to a boil.
-Add black pepper crushed, onion powder, cayenne pepper powder, fine sugar, soy sauce, rice, vinegar, Worcestershire sauce, mix well, cook on medium flame for 1 minute.
-Add carrot, mix well & cook on medium flame for 2 minutes.
-Add onion, mix well, make corn flour slurry & add in gravy, mix well, cook on medium flame for 1 minute or until slightly thickened.
Assembling:
-In a serving platter, add boiled rice, prepared sauce, cheese slice, prepared menchi katsu, & garnish with spring onion, sesame seeds then serve!

Prepare Chicken Menchi Katsu:
-Chopper mein crushed kali mirch, chicken powder, crushed lal mirch, pink salt, adrak lehsan paste aur soy sauce dalein aur achi tarah chop karlen.
-50g chicken mixture lein, flatten karen, beech mein mozzarella cheese cube rakhain, phir doosra 50g chicken mixture flatten kar ke upar rakhain, corners seal karen aur patty bana len.
-Chicken patty ko maida, phir beaten anda aur phir breadcrumbs se coat karen. (3-4 patties ban jayengi)
-Wok mein cooking oil dalein aur 120°C tak garam karen.
-Prepared chicken patties dalein aur halki aanch par fry karen jab tak golden aur crispy ho jayein.
Prepare Sauce:
-Pan mein cooking oil dalein aur garam karen.
-Tomato paste dalein aur mix karen, phir chicken stock dalein aur mix karen, ubal anay dein.
-Crushed kali mirch, onion powder, cayenne pepper powder, bareek cheeni, soy sauce, rice vinegar aur Worcestershire sauce dalein, mix karen aur medium aanch par 1 minute pakaen.
-Gajar dalein, mix karen aur medium aanch par 2 minutes pakaen.
-Pyaz dalein, mix karen, cornflour slurry bana kar gravy mein dalein, mix karen aur medium aanch par 1 minute pakaen ya jab tak halka gaadha ho jaye.
Assembling:
-Serving platter mein boiled chawal dalein, prepared sauce dalein, cheese slice rakhain, phir prepared menchi katsu rakhain.
-Spring onion aur til se garnish karen aur serve karen!
