Street Style Mix Pakora

Ingredients:

-Palak (Spinach) chopped 150g

-Pyaz (Onion) sliced 400g

-Aloo (Potatoes) julienne 500g

-Hara dhania (Fresh coriander) chopped handful

-Hari mirch (Green chillies) chopped 5-6

-Iodized Himalayan pink salt ½ tbs or to taste

-Baisan (Gram flour) 2 & ½ Cups

-Lal mirch (Red chilli) crushed 1 tbs

-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs

-Zeera (Cumin seeds) roasted & crushed 1 tbs

-Korma masala 2 tbs

-Haldi powder (Turmeric powder) ½ tsp

-Ajwain (Carom seeds) crushed 1 tsp

-Zarda ka rang (Yellow food color) ¼ tsp

-Baking soda 1 tsp

-Water ¼ Cup or as required

-Cooking oil for frying

-Chaat masala

 

Directions:

-In a bowl,add spinach,onion,potatoes,fresh coriander,green chillies,pink salt & mix well,cover & let it rest for 10-15 minutes.

-Add gram flour,red chilli crushed,coriander seeds,cumin seeds,korma masala,turmeric powder,carom seeds,yellow food color,baking soda & mix well.

-Gradually add water & mix well to make a thick batter.

-Option #1: In a wok,heat cooking oil & fry on medium flame until golden & crispy.

-Option #2: Air fry at 180 C for 4 minutes, apply oil in between then continue airfrying until golden and crispy.

-Sprinkle chaat masala & serve with chutney.
