Ingredients:
-Mutton mix boti 1 kg
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Himalayan pink salt 1 tsp or to taste
-Water 3 Cups or as required
-Cooking oil ¾ Cup
-Pyaz (Onion) chopped 1 Cup
-Hari mirch (Green chillies) sliced 2-3
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Kashmiri lal mirch (Kashmiri Red chilli) powder 1 tsp
-Lal mirch (Red chilli) crushed 2 tsp
-Zeera (Cumin seeds) roasted & crushed 2 tsp
-Sabut dhania (Coriander seeds) roasted & crushed 2 tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Dahi (Yogurt) whisked ½ Cup
-Tamatar (Tomatoes) chopped 3 medium
-Himalayan pink salt ½ tsp or to taste
-Kasuri methi (Dried fenugreek leaves) 1 tsp
-Lemon juice 1 tbs
-Hari mirch (Green chillies) 3-4
-Adrak (Ginger) julienne 1-inch piece
-Hara dhania (Fresh coriander) chopped handful

Directions:
-In a pressure cooker,add mutton,ginger garlic paste,pink salt,water,mix well & bring it to boil,close pressure cooker & cook on medium flame until pressure builds & pressure cook on low flame for 20-25 minutes & set aside.
-On stove: cook until mutton is tender (40-45 minutes).
-In a wok,add cooking oil,onion & mix well.
-Add green chillies,mix well & fry until onions are translucent.
-Add ginger garlic paste & mix well.
-Add kashmiri red chilli powder,red chilli crushed,cumin seeds,coriander seeds,black pepper powder,mix well & cook spices for a minute.
-Add yogurt,mix well & cook on medium flame for 2 minutes.
-Add tomatoes & continue cooking for 1-2 minutes.
-Add pink salt,dried fenugreek leaves,lemon juice & mix well,cover & cook on low flame for 4-5 minutes.
-Add boiled mutton & mix well.
-Add green chillies,ginger,fresh coriander & mix well,cover & cook on low flame for 6-8 minutes.
-Garnish with ginger,fresh coriander & serve!

Directions:
-Pressure cooker mein mutton,adrak lehsan paste,pink salt aur pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur pressure cooker ko bund ker dein aur darmiyani ancch per pressure build ho janay tak paka lein phir halki ancch per 20-25 minutes kliya pressure cook ker lein & side per rakh dein.
-Stove per mutton gul janay tak paka lein (40-45 minutes).
-Karahi mein cooking oil aur pyaz dal ker ache tarhan mix ker lein.
-Hari mirchein dal ker ache tarhan mix karein aur pyaz ko translucent ho janay tak fry ker lein.
-Adrak lehsan paste dal ker ache tarhan mix karein.
-Kashmiri lal mirch powder,lal mirch crushed,zeera,sabut dhania aur kali mirch powder dal ker ache tarhan mix karein aur spices ko ek minute kliya paka lein.
-Dahi dal ker ache tarhan mix karein aur darmiyani ancch per 2 minute kliya paka lein.
-Tamatar dal ker ache tarhan mix karein aur aur darmiyani ancch per 1-2 minute kliya paka lein.
-Pink salt,kasuri methi aur lemon juice dal ker ache tarhan mix karein aur dhak ker halki ancch per 4-5 minutes kliya paka lein.
-Boiled mutton dal ker ache tarhan mix ker lein.
-Hari mirchein,adrak aur hara dhania dal ker ache tarhan mix karein aur dhak ker halki ancch per 6-8 minutes kliya paka lein.
-Adrak aur hara dhania sa garnish ker ka serve karein!
