Ingredients:
Prepare Creamy Chicken Filling:
-Cooking oil 2 tbs
-Chicken qeema (Mince) 500g
-Pyaz (Onion) chopped 2 medium
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Hot sauce 1 tbs
-Soy sauce 1 tbs
-Lal mirch (Red chilli) crushed 1 tsp
-Himalayan pink salt 1 tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Hari mirch (Green chilli) chopped 1 tbs
-Olper’s Cream ½ Cup (room temperature)
-Shimla mirch (Capsicum) chopped ½ Cup
-Olper’s Mozzarella cheese grated 2-3 tbs
-Hara dhania (Fresh coriander) chopped handful
Prepare Samosa Dough:
-Maida (All-purpose flour) sifted 3 Cups
-Himalayan pink salt 1 tsp or to taste
-Cooking oil 3 tbs
-Water 1 Cup or as required
-Olper’s Cheddar cheese slices as required
-Flour slurry (2 tbs all-purpose flour + 4 tbs water)
-Cooking oil for frying
Directions:
Prepare Creamy Chicken Filling:
-In a wok,add cooking oil,chicken mince & mix well until it changes color.
-Add onion & mix well.
-Add ginger garlic paste,mix well & cook for 1-2 minutes.
-Add hot sauce,soy sauce,red chilli crushed,pink salt,black pepper powder,green chilli,mix well & cook for 4-5 minutes.
-On low flame,add cream,mix well & cook for a minute.
-Let it cool.
-Add capsicum,mozzarella cheese,fresh coriander,mix well & set aside.
Prepare Samosa Dough:
-In a bowl,add all-purpose flour,pink salt,cooking oil & mix well until it crumbles.
-Gradually add water,mix well & knead until dough is formed.
-Grease with cooking oil,cover & let it rest for 30 minutes.
-Divide the dough in four portions.
-Take one portion,make a ball,sprinkle dry flour & roll out into a thin sheet with the help of rolling pin.
-Cut the rolled dough into square shape then cut into equal size of 4 squares (each 5 x 5 inch).
-Add prepared creamy chicken filling in the center of rolled dough & place a cheddar cheese slice on it.
-Apply flour slurry on the edges,fold all the corners of dough to make a mini envelope & seal properly (makes 22).
-Can be stored in an airtight container for up to 2 months in freezer.
-In a wok,heat cooking oil & fry samosa on low flame until golden & crispy.
-Serve with tomato ketchup!
