Ingredients:
Prepare Chicken Kabab:
-Boneless chicken ½ kg
-Pyaz (Onion) grated & squeezed 1 medium
-Hari mirch (Green chillies) 5-6
-Adrak (Ginger) 2-inch piece
-Lehsan (Garlic) 3-4 cloves
-Zeera (Cumin seeds) 1 & ½ tsp
-Namak (Salt) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Baisan (Gram flour) 1 & ½ tbs
-Anda (Egg) whisked ½
-Hara dhania (Fresh coriander) handful
-Cooking oil 2 tbs
Prepare Creamy Gravy:
-Cooking oil 1 tbs
-Hari elaichi (Green cardamom) 2-3
-Pyaz (Onion) sliced 2 small
-Badam (Almonds) soaked 7-8
-Hari mirch (Green chillies) 6-7
-Water ¼ Cup or as required
-Cooking oil 2-3 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Kali mirch (Black pepper) crushed 1 tsp
-Namak (Salt) ½ tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Zeera powder (Cumin powder) 1 tsp
-Garam masala powder ½ tsp
-Javitri powder (Mace powder) ¼ tsp
-Jaifil powder (Nutmeg powder) ¼ tsp
-Dahi (Yogurt) whisked ¼ Cup
-Olper’s Cream ¾ Cup
-Water 2-3 tbs
-Hara dhania (Fresh coriander) chopped
-Makhan (Butter)
-Pyaz (Onion) rings
-Hari mirch (Green chillies)
-Hara dhania (Fresh coriander) chopped
-Kali mirch (Black pepper) crushed
Directions:
Prepare Chicken Kabab:
-In chopper,add chicken,onion,green chillies,ginger,garlic,cumin seeds,salt,black pepper powder, gram flour,egg,fresh coriander,chop well & refrigerator for 30 minutes.
-With the help of wet hands,take a small quantity of mixture (50g) & make kababs of equal sizes (makes 12).
-In a frying pan,add cooking oil & shallow fry all kababs on medium flame until golden brown.
Prepare Creamy Gravy:
-In a frying pan,add cooking oil,green cardamom,onion & mix well.
-Add almonds,green chillies & sauté until onions are translucent.
-Let it cool.
-In a blender jug,add sautéed onions,water,blend well & set aside.
-In the same frying pan,add cooking oil,blended paste & mix well.
-Add ginger garlic paste,mix well & cook for a minute.
-Add black pepper crushed,salt,coriander powder,cumin powder,garam masala powder,mace powder,nutmeg powder,mix well & cook for 2-3 minutes.
-Add yogurt,mix well & cook for 1-2 minutes.
-Turn off the flame,add cream & mix well.
-Turn on the flame,add water to adjust consistency & mix well.
-Add fresh coriander,cover & cook on low flame for 6-8 minutes.
Assembling:
-Heat sizzler pan,add butter & let it melt.
-Add onion rings,green chillies,kababs & pour creamy gravy.
-Add fresh coriander,black pepper crushed & serve!
