Ingredients:
Prepare Za’atar Chicken:
-Dried oregano 1 & ½ tbs
-Safed til (Sesame seeds) 1 & ½ tbs
-Dried basil ½ tbs
-Namak (Salt) 1 tsp or to taste
-Zeera powder (Cumin powder) ½ tsp
-Sumac powder ½ tbs
-Lehsan powder (Garlic powder) ½ tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Chicken mix boti with skin 750g
-Lemon juice 3 tbs
-Cooking oil 1 tbs
-Makhan (Butter) 2-3 tbs
-Pyaz (White onion) sliced 2 medium
-Lehsan (Garlic) 9-10 cloves
-Green olives 12-15
Prepare Saffron Rice:
-Zafran (Saffron strands) 1 tbs
-Lukewarm water 2-3 tbs
-Cooking oil 2 tbs
-Lehsan (Garlic) chopped 3 tbs
-Kishmish (Raisins) 2-3 tbs
-Gajar (Carrots) julienne ½ Cup
-Chawal (Rice) boiled with salt 2 & ½ Cups
-Kali mirch powder (Black pepper powder) ¼ tsp
Directions:
Prepare Za’atar Chicken:
-In a frying pan,add dried oregano,sesame seeds,dried basil & dry roast on medium flame until fragrant (2 minutes).
-Let it cool completely then crush coarsely.
-Add salt,cumin powder,sumac powder,garlic powder,black pepper powder,mix well & set aside.
-In a bowl,add chicken,lemon juice,prepared za’atar spice mix & mix well,cover & marinate for 2 hours.
-In a frying pan,add cooking oil,butter & let it melt.
-Add white onion,garlic & sauté until translucent.
-Add marinated chicken,green olives,cover & cook on low flame until tender (30-35 minutes),turn sides in between & set aside.
Prepare Saffron Rice:
-In a small bowl,add saffron strands,lukewarm water,mix well & set aside.
-In a wok,add cooking oil,garlic & sauté for a minute.
-Add raisins,carrots,,mix well & cook for 1-2 minutes.
-Add boiled rice & mix well.
-Add black pepper powder,saffron water & mix gently.
-Serve za’atar chicken with prepared saffron rice!

-Thanda ker lein phir coarsely crush ker lein.
-Namak,zeera powder,sumac powder,lehsan powder aur klai mirch powder dal ker ache tarhan mix ker lein & side per rakh dein.
-Bowl mein chicken,lemon juice aur tayyar za’atar spice mix dal ker ache tarhan mix karein aur dhak ker 2 hours kliya marinate ker lein.
-Frying pan mein cooking oil aur makhan dal ker melt ker lein.
-Pyaz aur lehsan dal dein aur translucent hunay tak sauté ker lein.
-Marinated chicken aur green olives dal ker dhak dein aur halki ancch per gul janay tak paka lein (30-35 minutes) aur bech bech mein sides ko change ker lein & side per rakh dein.
Prepare Saffron Rice:
-Chotay bowl mein zafran aur neem garam pani dal ker ache tarhan mix ker lein & side per rakh dein.
-Karahi mein cooking oil aur lehsan dal dein aur ek minute kliya sauté ker lein.
-Kishmish aur gajar dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Boiled chawal dal ker ache tarhan mix ker lein.
-Kali mirch powder aur zafran water dal ker gently mix ker lein.
-Za’atar chicken ko tayya saffron rice ka saath serve karein!
