Ingredients:
-Safed lobia (Black eyed beans) 1 & ½ Cup
-Namak (Salt) 1 tsp or to taste
-Water 4 Cups
-Cooking oil 3-4 tbs
-Pyaz (Onion) chopped 2 medium
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Tamatar (Tomatoes) chopped 3-4 medium
-Reserved boiled beans water ¼ Cup
-Dhania powder (Coriander powder) 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Haldi powder (Turmeric powder) ¼ tsp
-Zeera powder (Cumin powder) 1 tsp
-Namak (Salt) 1 tsp or to taste
-Makhan (Butter) 2-3 tbs
-Kasuri meethi (Dried fenugreek leaves) 2 tbs
-Garam masala powder ½ tsp
-Reserved boiled beans water ¾ Cup
-Lemon juice 1 tbs
-Hari mirch (Green chillies) sliced 2-3
-Hara dhania (Fresh coriander) chopped handful
-Hara dhania (Fresh coriander) chopped
-Lemon wedges
Directions:
-In a pressure cooker,add black eyed beans,salt,water & mix well,cover & pressure cook for 12-15 minutes then strain & set aside.
-Reserve 1 Cup of boiled beans water for later use.
-In a wok,add cooking oil,onion & sauté until translucent.
-Add ginger garlic paste & mix well.
-Add tomatoes & mix well.
-Add reserved boiled beans water & mix well.
-Add coriander powder,red chilli powder,turmeric powder,cumin powder,salt,mix well & cook until tomatoes are soft (3-4 minutes).
-Add butter,dried fenugreek leaves,garam masala powder,mix well & cook for 2 minutes.
-Add boiled black-eyed beans & mix well.
-Add reserved boiled beans water & mix well.
-Add lemon juice,green chillies,fresh coriander & mix well.
-Garnish with fresh coriander,lemon wedges & serve with chapati or naan!

Directions:
-Pressure cooker mein safed lobia,namak aur pani dal ker ache tarhan mix karein aur dhak ker 12-15 minutes kliya pressure cook ker lein phir strain ker ka side per rakh dein.
-1 Cup boiled beans ko bad mein use kernay kliya side per rakh dein.
-Karahi mein cooking oil aur pyaz dal dein aur translucent hunay tak sauté ker lein.
-Adrak lehsan paste dal ker ache tarhan mix karein.
-Tamatar dal ker mix ker lein.
-Reserved boiled beans water dal ker ache tarhan mix karein.
-Dhania powder,lal mirch powder,haldi powder,zeera powder aur namak dal ker ache tarhan mix karein aur tamatar naram ho janay tak paka lein (3-4 minutes).
-Makhan,kasuri meethi aur garam masala powder dal ker ache tarhan mix karein aur 2 minutes kliya paka lein.
-Boiled lobia dal ker ache tarhan mix ker lein.
-Reserved boiled beans water dal ker ache tarhan mix karein.
-Lemon juice,hari mirch aur hara dhania dal ker ache tarhan mix karein.
-Hara dhania aur lemon wedges sa garnish ker lein,chapati or naan ka saath serve karein!
