Ingredients:
- Falak Extreme Basmati Rice 2 Cups (approx. 400g)
- Water as required
- Water 2 litres or as required
- Namak (Salt) ½ tbs or to taste
- Sirka (Vinegar) 1 tbs
- Cooking oil 2 tsp
Prepare Chicken Skewers:
- Chicken boneless cubes ½ kg
- Lehsan paste (Garlic paste) 1 tbs
- Adrak paste (Ginger paste) 1 tbs
- Hari mirch (Green chilli) paste 2 tbs
- Dahi (Yogurt) whisked ½ Cup
- ara dhania (Fresh coriander) chopped 2 tbs
- Kali mirch powder (Black pepper powder) 1 tsp
- Namak (Salt) 1 & ½ tsp or to taste
- Safed mirch powder (White pepper powder) ½ tsp
- Garam masala powder 1 tsp
- Sabut dhania (Coriander seeds) roasted & crushed ½ tbs
- Zeera (Cumin seeds) roasted & crushed ½ tbs
- Khopra (Desiccated coconut) 2 tbs
- Charcoal for smoke
- Cheddar cheese as required
Prepare Vegetables:
- Cooking oil 2-3 tbs
- Pyaz (Onion) chopped 1 medium
- Lehsan (Garlic) chopped 1 & ½ tbs
- Adrak (Ginger) julienne 2 inch piece
- Gajar (Carrots) julienne 1 Cup
- Shimla mirch (Capsicum) julienne 1 Cup
- Corn kernels boiled ½ Cup
- Band gobhi (Cabbage) shredded 1 Cup
- Lal mirch (Red chilli) crushed 2 tsp
- Namak (Salt) ½ tsp or to taste
- Kali mirch (Black pepper) crushed 1 tsp
- Hara pyaz (Green onion) leaves chopped ¼ Cup
- Soy sauce 1 tbs
Prepare Mayo Sauce:
- Mayonnaise 1 Cup
- Tomato ketchup 3 tbs
- Mustard paste 1 tbs
- Lehsan powder (Garlic powder) ½ tsp
- Paprika powder ¼ tsp
- Namak (Salt) ¼ tsp or to taste
Prepare Tadka:
- Cooking oil ¼ Cup
- Lehsan (Garlic) chopped 1 tbs
- Adrak (Ginger) chopped 1 tbs
- Lal mirch (Red chilli) crushed 2 tsp
Directions:
In a bowl,add rice,water,wash thoroughly and soak for 20 minutes then strain soaked rice & set aside.
In boiling water,add salt,vinegar and mix well.
Add soaked rice and mix well.
Add cooking oil,mix well & boil until 3/4th done (8-10 minutes) then strain & set aside.
Prepare Chicken Skewers:
In a bowl,add chicken,garlic paste,ginger paste,green chilli paste,yogurt,fresh coriander,black pepper powder,salt,white pepper powder,garam masala powder,coriander seeds,cumin seeds,desiccated coconut and mix well,cover & marinate for 25-30 minutes.
Give coal smoke for 2-3 minutes.
Grease hands and skewers with oil.
Now thread chicken cubes into wooden skewers (makes 8-10).
Grease grill pan with cooking oil,place chicken skewers and cook on medium low flame from all sides until golden brown (approx. 7-8 minutes).
On skewers,grate cheddar cheese from top & set aside.
Prepare Vegetables:
In a wok,add cooking oil,onion & mix well.
Add garlic & sauté for a minute.
Add ginger & mix well.
Add carrots,capsicum,corn kernels,cabbage,mix well & cook for 2 minutes.
Add red chilli crushed,salt,black pepper crushed & mix well.
Add green onion leaves & mix well.
Add soy sauce,mix well & set aside.
Prepare Mayo Sauce:
In a bowl,add mayonnaise,tomato ketchup,mustard paste,garlic powder,paprika powder and salt,mix well & set aside.
Prepare Tadka:
In a saucepan,add cooking oil,garlic,ginger & cook for a minute.
Add red chilli crushed,mix well & set aside.
In a serving dish,add boiled rice,add & spread prepared tarka,add prepared vegetables,chicken skewers and potato fries.
Sprinkle green onion leaves & drizzle prepared mayo sauce & serve!

Directions:
Bowl mein chawal aur pani dal ker thoroughly wash ker lein aur 20 minutes kliya bhego dein phir soaked chawal ko strain ker lein & side per rakh dein.
Boiling water mein namak aur sirka dal ker ache tarhan mix karein.
Soaked chawal dal ker mix ker lein.
Cooking oil dal ker mix karein aur 3/4th done hunay tak boil ker lein (8-10 minutes) phir strain ker ka side per rakh dein.
Prepare Chicken Skewers:
Bowl mein chicken,lehsan paste,adrak paste,hari mirch paste,dahi,hara dhania,kali mirch powder, namak,safed mirch powder,garam masala powder,sabut dhania,zeera aur khopra dal ker ache tarhan mix ker lein aur dhak ker 25-30 minutes kliya marinate ker lein.
2-3 minutes kliya koyla ka dhuwan dein.
Haathon ko aur skewers ko oil sa grease ker lein.
Chicken cubes ko wooden skewers per laga lein (makes 8-10).
Grill pan ko cooking oil sa grease karein aur chicken skewers ko darmiyani halki ancch per tamam saides sa golden brown hunay tak paka lein (approx. 7-8 minutes).
Skewers per cheddar cheese grate ker ka dal dein & side per rakh dein.
Prepare Vegetables:
Karahi mein cooking oil aur pyaz dal ker ache tarhan mix ker lein.
Lehsan dal ker ek minute kliya saute ker lein.
Adrak dal ker ache tarhan mix ker lein.
Gajar,shimla mirch,corn kernels aur band gobhi dal ker ache tarhan mix karein aur 2 mintes kliya paka lein.
Lal mirch crushed,namak aur kali mirch crushed dal ker ache tarhan mix ker lein.
Hara pyaz leaves dal ker ache tarhan mix ker lein.
Soy sauce dal ker ache tarhan mix karein & side per rakh dein.
Prepare Mayo Sauce:
Bowl mein mayonnaise,tomato ketchup,mustard paste,lehsan powder,paprika powder aur namak dal ker ache tarhan mix ker lein & side per rakh dein.
Prepare Tadka:
Saucepan mein cooking oil,lehsan aur adrak dal dein aur ek minute kliya paka lein.
Lal mirch crushed dal ker ache tarhan mix karein & side per rakh dein.
Serving dish mein boiled chawal aur tayyar tadka dal ker pheela lein,tayyar vegetables,chicken skewers aur potato fries dal dein.
Hara pyaz leaves aur tayyar mayo sauce dal ker serve karein!
