Ingredients:
Prepare Chicken Filling:
- Cooking oil 2 tbs
- Pyaz (Onion) chopped 1 medium
- Chicken qeema (Mince) 400g
- Adrak lehsan paste (Ginger garlic paste) 1 tsp
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Namak (Salt) 1 tsp or to taste
- Zeera (Cumin seeds) roasted & crushed 1 & ½ tsp
- Sabut dhania (Coriander seeds) roasted 1 tbs
- Hari mirch (Green chilli) chopped 1-2 tbs
- Hara dhania (Fresh coriander) chopped 1-2 tbs
Prepare Plain Dough:
- Maida (All-purpose flour) 2 & ½ Cups
- Namak (Salt) 1 & ½ tsp
- Ghee 2 tbs
- Water 1 Cup or as required
Prepare Shortening Dough:
- Ice cubes as required
- Chilled water as required
- Ghee melted 1 Cup
- Maida (All-purpose flour) 1 & ½ Cup
- Maida (All-purpose flour) 1 tbs
- Maida (All-purpose flour) 1 tbs
- Cooking oil for frying
Directions:
Prepare Chicken Filling:
In a frying pan,add cooking oil,onion & sauté until translucent.
Add chicken mince & mix well until it changes color.
Add ginger garlic paste & mix well for a minute.
Add red chilli powder,salt,cumin seeds,coriander seeds,green chilli,mix well & cook until it dries up (4-5 minutes).
Add fresh coriander & mix well.
Let it cool.
Prepare Plain Dough:
In a bowl,add all-purpose flour,salt & mix well.
Add ghee & mix well until it crumbles.
Gradually add water & knead until hard dough is formed,cover & let it rest for 20 minutes.
Prepare Shortening Dough:
In a bowl,add ice cubes,chilled water,melted ghee & leave it until ghee becomes solid (approx. 30 minutes),take out solid ghee from water and squeeze out excess water completely. Ghee shortening is ready!
In a bowl,add shortening balls,all-purpose flour & mix well until flour & shortening comes together.
Gradually add dry flour,mix well then mash well with the help of masher.
Again add all-purpose flour & knead dough again,cover & freeze for 30 minutes.
Knead dough again until smooth then divide the dough in 4 equal parts & make a balls.
Now divide the shortening dough into 4 equal parts,take one part and make a ball.
Take one ball of dough & flatten with the help of hands,place shortening dough ball in the center,pull & gather all the edges of dough to make a ball,pinch & seal the ends.
Dust dry flour & roll out with the help of rolling pin,roll up and press the dough,dust dry flour & roll out with the help of rolling pin.Repeat the step once again.
Now gently cut it into 6 equal parts,take one part,dust dry flour & roll out with the help of rolling pin.
Place the dough on samosa maker,add prepared chicken filling in center,apply water on the edges,press & close samosa maker to make samosa and remove extra dough (makes 24-25).
In a wok,heat cooking oil & fry samosa on low flame until golden & crispy.
Serve with tomato ketchup & chutney.

Lal mirch powder,namak,zeera,sabut dhania aur hari mirch dal ker ache tarhan mix karein aur sukh janay tak paka lein (4-5 minutes).
Hara dhania dal ker ache tarhan mix ker lein.
Thanda ker lein.

Bowl mein maida aur namak dal ker ache tarhan mix karein.
Ghee dal dein aur crumbles hunay tak ache tarhan mix ker lein.
Thora thora ker ka pani shamil karein aur ghond ker hard dough tayyar ker lein aur dhak ker 20 minutes kliya rakh dein.
Prepare Shortening Dough:
Bowl mein ice cubes,chilled water aur melted ghee dal dein aur ghee solid hunay tak chor dein (approx. 30 minutes),solid ghee ko pani sa nikal lein aur ache tarhan squeeze ker ka pani nikal lein.Ghee shortening tayyar hai.
Bowl mein shortening balls aur maida dal dein,miada aur shortening ko ache tarhan mix ker lein.
Thora thora ker ka maida shamil kertay jayein aur ache tarhan mix ker ka masher ki madad sa mash ker lein.
Dubara maida dal ker dough ko dubara ghond lein aur dhak ker 30 minutes kliya freezer mein rakh dein.
Dough ko smooth hunay tak dubara ghond lein phir 4 equal parts mein divide ker lein aur balls bana lein.
Shortening dough ko 4 equal parts mein divide ker lein aur ek part la ker ball bana lein.
Ek dough ball la lein aur haath ki madad sa flat ker lein aur dough ka center mein shortening ball rakh ker edges ko gather ker ka pull karein aur ball bana ker press & seal ker lein.
Maida chirak dein aur rolling pin ki madad sa bail lein,roll up ker ka dough ko press ker lein aur maida chirak ker rolling pin ki madad sa bail lein.Yehe step dubara karein.
Ab gently dough ko 6 parts mein cut ker lein,ek part lein aur miada chirak ker rolling pin ki madad sa bail lein.
Dough ko samosa maker mein rakh ker tayyar chicken filling ko center mein dal dein,edges per pani laga lein aur samosa maker ko bund ker dein aur excess dough ko nikal lein (makes 24-25).
Karahi mein cooking oil garam karein aur samosa ko halki ancch per golden & crispy hunay tak fry ker lein.
Tomato ketchup & chutney ka saath serve karein.
