Ingredients:
-Maida (All-purpose flour) sifted 2 & ½ Cups
-Sooji (Semolina) ¼ Cup
-Zeera (Cumin seeds) 1 & ½ tsp
-Kali mirch (Black pepper) crushed ½ tsp
-Ajwain (Carom seeds) ½ tsp
-Red chilli (Red chilli) crushed ½ tsp
-Namak (Salt) ½ tsp or to taste
-Ghee (Clarified butter) melted 3 tbs
-Water 1 Cup or as required
-Maida (All-purpose flour) 1 & ½ tbs
-Ghee (Clarified butter) 2 tbs
-Cooking oil for frying
Directions:
-In a bowl,add all-purpose flour,semolina,cumin seeds,black pepper crushed,carom seeds,red chilli crushed,salt & mix well.
-Add melted clarified butter& mix well until it crumbles.
-Gradually add water,mix well & knead until dough is formed,cover & let it rest for 15 minutes.
-Knead dough until smooth & divide into 7 equal portions.
-Take one small dough (80g),make a ball,sprinkle dry flour & roll out with the help of a rolling pin (8 inches).
-Repeat the same process for all portions & set aside.
-In a bowl,add all-purpose flour,clarified butter & whisk well.
-On 1st rolled dough,apply flour & ghee mixture and place another rolled dough on it.
-Now place remaining rolled dough in similar manner (6 layers) and apply flour & ghee mixture in between each layer.
-Gently roll the dough into a log shape,cut thin portion with a sharp knife avoid to damage the layering of dough.
-Take one portion of dough,press gently & roll out with the help of rolling pin.
-In a wok,heat cooking oil & fry on low flame until golden & crispy (makes 11-12).
Ajza:
-Maida (All-purpose flour) sifted 2 & ½ Cups

-Melted ghee dal dein aur crumble ho janay tak ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 15 minutes kliya rest dein.
-Dough ko smooth hunay tak dubara ghond lein aur 7 equal portions mein divide ker lein.
-Ek portion (80g) lein aur ball bana lein,maida chirak dein aur rolling pin ki madad sa (8 inches) bail lein.
-Yehe same process tamam portions kliya karein & side per rakh dein.
-Bowl mein maida aur desi ghee dal ker ache tarhan whisk ker lein.
-1st rolled dough per flour & ghee mixture laga lein aur us ka upper dosri rolled dough rakh dein.
-Ab is he tarhan tamam rolled dough raktay jayein aur flour & ghee mixture her layer ka bech mein lagatay rahein (6 layers).
-Gently roll ker ka log shape bana lein aur sharp knife ki madad sa thin portions mein cut ker lein.
-Ek portion lein,gently press karein aur rolling pin ki madad sa pheela lein.
-Karahi mein cooking oil garam karein aur halki ancch per golden & crispy ho janay tak fry ker lein (makes 11-12).
