Vegetable Shashlik Sizzler

Ingredients:

  • Tomato ketchup 1/3 Cup
  • Hot sauce 3 tbs
  • Sirka (Vinegar) 2 tbs
  • Soy sauce 3 tbs
  • Lal mirch (Red chilli) crushed 1 tbs
  • Kali mirch powder (Black pepper powder) 1 tbs
  • Chicken powder 1 & ½ tbs
  • Paprika powder ½ tbs

Vegetable Fried Rice:

  • Cooking oil 2 tbs
  • Lehsan (Garlic) chopped 1 tbs
  • Adrak (Ginger) chopped ½ tbs
  • Hari mirch (Green chilli) crushed 1 tbs
  • Hara pyaz (Green onion) white part chopped ¼ Cup
  • Gajar (Carrots) chopped ¼ Cup
  • Matar (Peas) ¼ Cup
  • Shimla mirch (Capsicum) chopped ¼ Cup
  • Hara pyaz (Green onion) leaves chopped 2 tbs
  • Namak (Salt) ¼ tsp or to taste
  • Chawal (Rice) boiled 200g

Stir-fried Vegetables:

  • Cooking oil 2 tbs
  • Lehsan (Garlic) chopped 1 tbs
  • Adrak (Ginger) chopped ½ tbs
  • Phool gobhi (Cauliflower) florets 1 Cup
  • Mushrooms 1 Cup
  • Pyaz (Onion) cubes 1 Cup
  • Tamatar (Tomatoes) cubes & deseeded 1 Cup
  • Shimla mirch (Capsicum) cubes 1 Cup
  • Sugar 1 tsp
  • Namak (Salt) ½ tsp or to taste

Shashlik Sauce:

  • Cooking oil 1-2 tbs
  • Lehsan (Garlic) chopped 1 & ½ tbs
  • Hari mirch (Green chilli) chopped 1 tbs
  • Pyaz (Onion) chopped ¼ Cup
  • Water 1 & ½ Cup or as required
  • Namak (Salt) ¼ tsp or to taste
  • Cornflour 1 & ½ tbs or as required
  • Makhan (Butter) 1 tbs
  • Band gobhi (Cabbage) leaves

Directions:

In a bowl,add tomato ketchup,hot sauce,vinegar,soy sauce,red chilli crushed,black pepper powder, chicken powder,paprika powder,mix well & set aside.

Vegetable Fried Rice:

In a wok,add cooking oil,garlic,ginger,green chilli & sauté for 30 seconds.

Add green onion white part & fry for 1 minute.

Add carrots,peas & cook for 2-3 minutes.

Add capsicum and mix well.

Add prepared sauce mix (2-3 tbs),green onion leaves,salt & mix well.

Add boiled rice,mix well & set aside.

Stir-fried Vegetables:

In a wok,add cooking oil,garlic,ginger & sauté for 1 minute.

Add cauliflower,mushrooms,mix well & cook for 4-5 minutes.

Add onions,tomatoes,capsicum,sugar,salt and mix well for 1-2 minutes.

Add prepared sauce mix (2-3 tbs) and stir fry on high flame for 1-2 minutes & set aside.

Shashlik Sauce:

In a saucepan,add cooking oil,garlic,green chilli & mix well.

Add onion,mix well & sauté until translucent.

Add remaining prepared sauce mix & mix well.

In water,add salt,cornflour and whisk well.

Now add dissolved cornflour and whisk well,bring it to boil and cook until sauce is thick and keep whisking in between.Shashlik sauce is ready!

Assembling:

Heat cast iron sizzler plate directly on stove.

Add & spread butter,place cabbage leaves,fried rice,potato fries,stir-fried vegetable,shashlik sauce & serve!
