Ingredients:
Prepare Kafta:
- Pyaz (Onion) 1 small
- Shimla mirch (Capsicum) cubes 1 small
- Fresh parsley 1 Cup
- Lehsan (Garlic) chopped ½ tbs
- Beef qeema (Mince) ½ kg (with 10% fat)
- Namak (Salt) 1 tsp or to taste
- Zeera powder (Cumin powder) 1 tsp
- Kali mirch powder (Black pepper powder) 1 tsp
- Dhania powder (Coriander powder) 1 tsp
- Sumac powder 2 tsp
- Seven spices 1 tsp
- Cooking oil 2 tbs
Prepare Hummus:
- Safed chanay (Chickpeas) boiled 2 & ½ Cups
- Lehsan (Garlic) sliced 3-4 cloves
- Tahini 5-6 tbs
- Namak (Salt) ¼ tsp or to taste
- Zeera powder (Cumin powder) ½ tsp
- Olive oil 2 tbs
- Lemon juice 2-3 tbs
- Crushed ice 2-3 cubes
- Olive oil
- Sumac powder
Prepare Quick Tabbouleh:
- Kheera (Cucumber) peeled & diced 1 Cup
- Tamatar (Tomatoes) diced 1 Cup
- Pickled cucumber diced ½ Cup
- Lehsan (Garlic) chopped ½ tbs
- Fresh parsley chopped ½ Cup
- Podina (Mint leaves) chopped ½ Cup
- Namak (Salt) to taste
- Kali mirch (Black pepper) crushed to taste
- Lemon juice 1 tbs
- Olive oil 2 tbs
- Feta cheese cubes ¼ Cup
Prepare Tzatziki Sauce:
- Dahi (Yogurt) hung 1 Cup
- Kheera (Cucumber) grated with skin & squeezed 1 Cup
- Lehsan (Garlic) chopped 1 tsp
- Podina (Mint leaves) chopped 2-3 tbs
- Namak (Salt) ¼ tsp or to taste
- Lemon juice 1 tbs
- Olive oil 2 tbs
Assembling:
- Kheera (Cucumber)
- Black & green olives
- Cherry tomatoes
- Pita bread toasted
- Pickled cucumber
- Fresh parsley
- Lemon slices
- Crackers
- Badam (Almonds)
Directions:
Prepare Kafta:
In a chopper,add onion,capsicum,fresh parsley,garlic & chop well.
Add beef mince,salt,cumin powder,black pepper powder,coriander powder,sumac powder,seven spices & chop until well combined & refrigerate for 30 minutes.
Grease hand with cooking oil,take out small quantity of beef mixture (40g),make a smooth ball & skew on wooden skewers (makes 16-18).
Heat cast iron grill pan,add cooking oil & grill kafta on medium flame until done (8-10 minutes).
Prepare Hummus:
In a chopper,add boiled chickpeas,garlic,tahini,salt,cumin powder & blend well.
Add olive oil,lemon juice,crushed ice & blend until well combined.
Take out in a dish,add olive oil,sprinkle sumac powder & set aside.
Prepare Quick Tabbouleh:
In a bowl,add cucumber,tomatoes,pickled cucumber,garlic,fresh parsley,mint leaves,salt,black pepper crushed,lemon juice,olive oil,mix & toss well.
Add feta cheese,mix well & set aside.
Prepare Tzatziki Sauce:
In a bowl,add yogurt,cucumber,garlic,mint leaves,salt,lemon juice,olive oil & whisk well.
Assembling:
On a large serving board,place prepared hummus,tabbouleh,cucumber,black & green olives,cherry tomatoes,pita bread,kafta kabab,pickled cucumber,tzatziki sauce,pita bread,fresh parsley,lemon slices,crackers,almonds & serve with 7up!

Haath ko oil sa grease karein,beef mixture ki small quantity (40g) lein,smooth ball bana lein aur wooden skewer per laga lein (makes 16-18).
Cast iron grill pan ko garam karein,cooking oil dal dein aur kafta ko darmiyani ancch per grill ker lein (8-10 minutes).
Prepare Hummus:
Chopper mein boiled safed chanay,lehsan,tahini,namak aur zeera dal ker ache tarhan blend ker lein.
Olive oil,lemon juice aur crushed ice dal ker ache tarhan blend ker lein.
Dish mein nikal lein,olive oil aur sumac powder dal dein & side per rakh dein.
Prepare Quick Tabbouleh:
Bowl mein kheera,tamatar,pickled cucumber,lehsan,fresh parsley,podina,namak,kali mirch crushed, lemon juice aur olive dal ker ache tarhan mix & toss ker lein.
Feta cheese dal ker ache tarhan mix karein & side per rakh dein.
Prepare Tzatziki Sauce:
Bowl mein dahi,kheera,lehsan,podina,namak,lemon juice aur olive oil dal ker ache tarhan whisk ker lein.
Assembling:
Serving board per tayyar hummus,tabbouleh,kheera,black & green olives,cherry tomatoes,pita bread, kafta kabab,pickled cucumber,tzatziki sauce,pita bread,fresh parsley,lemon slices,crackers aur badam rakh dein & 7up ka saath serve karein.
