Ingredients:
Prepare Kofta Kebab:
-Boneless beef cubes 750g (with 20% fat)
-Pyaz (Onion) 1 medium
-Breadcrumbs ½ Cup
-Lehsan paste (Garlic paste) 1 tbs
-Paprika powder 1 tsp
-Zeera powder (Cumin powder) 1 tsp
-Namak (Salt) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Cayenne powder 1 tsp
-Dhania powder (Coriander powder) 1 tsp
-Baking soda ½ tsp
-Lemon juice 1 & ½ tbs
-Fresh parsley chopped ½ Cup
-Cooking oil 2-3 tbs

-Tamatar (Tomatoes) 2 medium
-Hari mirch (Green chillies) large 3
-Hari mirch (Green chillies) thin 3
Prepare Tahini Yogurt Sauce:
-Dahi (Yogurt) hung 1 Cup
-Cream 1-2 tbs
-Tahini paste 3-4 tbs
-Lehsan paste (Garlic paste) 1 tsp
-Zeera (Cumin seeds) roasted & crushed ¼ tsp
-Lal mirch (Red chilli) crushed ¼ tsp
-Namak (Salt) ¼ tsp or to taste
-Olive oil ½ tbs (optional)
Directions:
Prepare Kofta Kebab:
-In a chopper,add beef,onion,breadcrumbs,garlic paste,paprika powder,cumin powder,salt,black pepper powder,cayenne powder,coriander powder,baking soda,lemon juice & chop until well combined.
-In a bowl,add beef mixture,add fresh parsley & mix well.
-With the help of greased hands,take a small quantity of mixture (50g) & make a smooth ball,press to make a flat patty & make finger impressions on both sides (makes 17-18).
-In a cast iron pan,add cooking oil and fry kofta kababs on low flame from both sides until brown (6-7 minutes).
-Grease cast iron pan with cooking oil,add onion,tomatoes,green chillies large & green chillies thin and grill on medium flame until golden (2-3 minutes) & set aside.
Prepare Tahini Yogurt Sauce:
-In a bowl,add yogurt,cream,tahini paste,garlic paste,cumin seeds,red chilli crushed,salt & whisk well.
-Add olive oil,whisk well & set aside.
-Serve kofta kebab with saffron butter rice,grilled vegetables & tahini yogurt sauce!

-Bowl mein beef mixture ko nikal lein aur fresh parsley dal ker ache tarhan mix ker lein.
-Greased hands ki madad sa mixture ki small quantity (50g),smooth ball bana lein aur press ker ka flat patty bana lein aur dono sides per fingers ka impressions laga lein (makes 17-18).
-Cast iron pan mein cooking oil dal dein aur kofta kababs ko dono sides sa halki ancch per brown ho janay tak fry ker lein (6-7 minutes).
-Cast iron pan ko cooking oil sa grease karein,pyaz,tamatar,hari mirch large aur hari mirch thin dal ker darmiyani ancch per golden ho janay tak grill ker lein (2-3 minutes) & side per rakh dein.
Prepare Tahini Yogurt Sauce:
-Bowl mein dahi,cream,tahini paste,lehsan paste,zeera,lal mirch crushed aur namak dal ker ache tarhan whisk ker lein.
-Olive oil dal ker ache tarhan whisk karein & side per rakh dein.
-Kofta kebab ko saffron butter rice,grilled vegetables & tahini yogurt sauce ka saath serve karein.
