Ingredients:
Imli & Tamatar ki Chutney
- Tamatar (Tomatoes) cubed 4 large
- Gur (Jaggery) ½ Cup
- Imli pulp (Tamarind pulp) ½ Cup
- Kashmiri lal mirch (Kashmiri red chilli) powder 1 tbs
- Namak (Salt) ½ tsp or to taste
- Lal mirch powder (red chilli powder) 1 tsp or to taste
- Kala namak (Black salt) ½ tsp
- Zeera powder (Cumin powder) ½ tsp
- Kala namak (Black salt) ½ tsp
- Sonth (Dried ginger powder) ½ tsp
- Pani (Water) 1/4 Cup or as required
Tamatar & Pyaz ki Chutney
- Cooking oil 2-3 tbs
- Pyaz (Onion) sliced 1 large
- Lehsan (Garlic) cloves ½ Cup
- Hari mirch (Green chillies) 8-10
- Sabut lal mirch (Button red chillies) 3-4
- Tamatar (Tomatoes) cubed 4 large
- Namak (Salt) ½ tsp or to taste
- Zeera powder (Cumin powder) 1 tsp
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Pani (Water) 2-3 tbs or as required
- Boiled water 1/4 Cup or as required
Tadka:
- Cooking oil 3-4 tbs
- Lehsan (Garlic) sliced 2 cloves
- Zeera (Cumin seeds) 1/4 tsp
- Kary pata (Curry leaves) 10-12
Directions:
In pot,add tomatoes,jaggery,tamarind pulp,Kashmiri red chilli powder,salt,red chilli powder,black salt, cumin powder,dried ginger powder and water,mix well and bring it to boil,cover and cook on low flame for 12-15 minutes.
Let it cool down.
In blender jar,add cooked tomato mixture and blend well.
Can be stored in refrigerator for up to 1 week.
Tamatar & Pyaz ki Chutney
In wok,add cooking oil,onion and fry until translucent & take out in a bowl.
In wok,add garlic,green chillies,button red chilies and fry for 1 minute & take out in a bowl.
In wok,add tomatoes and cook for 1-2 minutes.
Add salt,cumin powder,red chilli powder and mix well.
Add water,mix well and cook for 2-3 minutes.
Let it cool down.
In blender jar,add onion&garlic mixture,cooked tomato mixture,boiled water and blend well.
Prepare Tadka:
In frying pan,add cooking oil,garlic and fry until light golden.
Add cumin seeds,curry leaves and mix well.
Pout tadka in blended tomato chutney and mix well.
Can be stored in refrigerator for up to 1 week.
Ajza:

Directions:
Pot mein tamatar,gur,imli pulp,Kashmiri red chili powder,namak,lal mirch powder,kala namak,zeera powder,sonth powder aur pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per 12-15 minutes kliya paka lein.
Thanda ker lein.
Blender mein cooked tamatar mixture dal ker ache tarhan blend ker lein.
Ek week tak refrigerator mein store ker saktay han.
Tamatar & Pyaz ki Chutney
Karhai mein cooking oil aur pyaz dal dein aur translucent hunay tak fry ker lein & bowl mein nikal lein.
Karhai mein lehsan,hari mirch aur sabut lal mirch dal ker 1 minute kliya fry karein & bowl mein nikal lein.
Karhai mein tamatar dal ker 1-2 minute kliya paka lein.
Namak,zeera powder aur kali mirch powder dal ker ache tarhan mix ker lein.
Pani dal ker mix karein aur 2-3 minute kliya paka lein.
Thanda ker lein.
Blender mein pyaz&lehsan mixture,cooked tamatar mixture aur boiled water dal ker ache tarhan blend ker lein.
Prepare Tadka:
Frying pan mein cooking oil aur lehsan dal ker light golden hunay tak fry ker lein.
Zeera aur kary pata dal ker ache tarhan mix ker lein.
Blended chutney mein tadka dal ker ache tarhan mix ker lein.
