Ingredients:
- Tamatar (Tomatoes) 3 medium
- Cooking oil 3 tbs
- Aalo (Potato) peeled & cubes 1 medium
- Gajar (Carrots) cubes 1 Cup
- Phaliyan (French beans) 1 Cup
- Matar (Peas) ½ Cup
- Phool gobhi (Cauliflower) small florets 1 Cup
- Baingan (Eggplant) cubes 1 Cup
- Chaat masala 1 tsp
- Haldi powder (Turmeric powder) ¼ tsp
- Cooking oil 2-3 tbs
- Zeera (Cumin seeds) roasted & crushed 1 tsp
- Ajwain (Carom seeds) ¼ tsp
- Sabut kali mirch (Black peppercorns) 3-4
- Tez patta (Bay leaf) 1
- Pyaz (Onion) finely chopped 1 medium
- Lehsan (Garlic) crushed ½ tbs
- Adrak (Ginger) crushed ½ tbs
- Hari mirch (Green chilli) chopped 1 tbs
- Water 2 tbs
- Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
- Dhania powder (Coriander powder) 1 tsp
- Lal mirch powder (Red chilli powder) ½ tsp or to taste
- Namak (Salt) ½ tsp or to taste
- Dashi Chicken powder 2 tsp
- Hara dhania (Fresh coriander) chopped 1 tbs
- Water 3-4 tbs
- Garam masala powder ½ tsp
- Kasuri meethi (Dried fenugreek leaves) 1 tsp
- Hara dhania (Fresh coriander) chopped
- Hari mirch (Green chilli)
- Lemon slices
Directions:
In a chopper,add tomatoes & puree tomatoes & set aside.
On a griddle,add cooking oil,potato & fry until light golden (approx. 3 minutes).
Add carrots & mix well.
Add french beans,peas,cauliflower,eggplant,mix well & tawa fry on medium flame for 2 minutes.
Add chaat masala,turmeric powder & mix well,cover & cook on low flame for 2-3 minutes.
Now move all the vegetables at one side of griddle.
In the center of griddle,add cooking oil,cumin seeds,carom seeds,black peppercorns,bay leaf & mix well.
Add onion,mix well & fry until light golden.
Add garlic,ginger and mix well.
Add green chilli & mix well.
Add water,kashmiri red chilli powder,coriander powder,red chilli powder,salt,mix well & cook for a minute.
Add pureed tomatoes,mix well & cook for 1-2 minutes.
Add chicken powder,mix well & cook until oil separates (2-3 minutes).
Add fresh coriander & mix well.
Add water & mix well.
Now add all vegetables,mix well & cook for a minute.
Add garam masala powder,dried fenugreek leaves & mix well.
Garnish with fresh coriander,green chilli,lemon slice & serve!

Directions:
Chopper mein tamatar dal dein aur chop ker ka puree tayyar ker lein & side per rakh dein.
Tawa per cooking oil aur aalo dal dein aur light golden ho janay tak fry ker lein (approx. 3 minutes).
Gajar dal ker ache tarhan mix karein.
Phaliyan,matar,phool gobhi aur baingan dal ker ache tarhan mix karein aur darmiyani ancch per 2 minute kliya tawa fry ker lein.
Chaat masala aur haldi powder dal ker ache tarhan mix karein aur dhak ker halki ancch per 2-3 minutes kliya paka lein.
Ab tamam vegetables ko tawa ki ek side per ker dein.
Tawa ka bech mein cooking oil,zeera,ajwain,sabut kali mirch aur tez patta dal ker ache tarhan mix ker lein.
Pyaz dal ker ache tarhan mix karein aur light golden ho janay fry ker lein.
Lehsan aur adrak dal ker ache tarhan mix ker lein.
Hari mirch dal ker ache tarhan mix karein.
Pani,kashmiri lal mirch powder,dhania powder,lal mirch powder aur namak dal ker ache tarhan mix karein aur ek minute kliya paka lein.
Pureed tamatar dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
Chicken powder dal ker ache tarhan mix karein aur oil alag ho janay tak paka lein (2-3 minutes).
Hara dhania dal ker ache tarhan mix ker lein.
Pani dal ker ache tarhan mix karein.
Ab tamam vegetables ko dal ker ache tarhan mix karein aur ek minute kliya paka lein.
Garam masala powder aur kasuri meethi dal ker ache tarhan mix ker lein.
