Ingredients:
Prepare Tandoori Aloo Skewers:
-Aloo (Potatoes) cubes 4-5 medium
-Himalayan pink salt ½ tsp or to taste
-Water as required
-Dahi (Yogurt) thick 1 Cup
-Kashmiri lal mirch (Kashmiri red chilli) powder ½ tbs
-Dhania powder (Coriander powder) 1 & ½ tsp
-Himalayan pink salt 1 tsp or to taste
-Zeera powder (Cumin powder) 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Garam masala powder ½ tsp
-Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
-Saunf (Fennel seeds) powder ½ tsp
-Kasuri methi (Dried fenugreek leaves) ½ tsp
-Kala namak (Black salt) ½ tsp
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Lemon juice 2 tbs
-Baisan (Gram flour) 1 tbs
-Zarda ka rang (Orange food color) ¼ tsp
-Tamatar (Tomatoes) deseeded & diced 3 medium
-Shimla mirch (Capsicum) deseeded & diced 3 medium
-Pyaz (Onion) diced 3 medium
-Cooking oil 2-3 tbs
Prepare Tandoori Pulao:
-Ghee (Clarified butter) ½ Cup
-Darchini (Cinnamon stick) 1 large
-Laung (Cloves) 3-4
-Sabut kali mirch (Black peppercorns) 10-12
-Zeera (Cumin seeds) 1 tsp
-Pyaz (Onion) sliced 1 large
-Hari mirch (Green chillies) 3-4
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Hara dhania (Fresh coriander) chopped handful
-Water 4 Cups
-Chicken cube 1
-Chawal (Rice) 3 Cups (soaked for 1 hour)
-Himalayan pink salt ½ tbs or to taste
-Koyla (Charcoal) for smoke
Directions:
Prepare Tandoori Aloo Skewers:
-In a saucepan,add potatoes,pink salt,water,mix well & bring it to boil,cover & cook on medium flame until potatoes are 90% done (7-8 minutes),strain,rinse with tap water & set aside.
-In a bowl,add yogurt,paprika powder,coriander powder,pink salt,cumin powder,turmeric powder,garam masala powder,red chili powder,fennel powder,dried fenugreek leaves,black salt,ginger garlic paste & whisk well.
-Take out ¼ Cup of prepared marinade & reserve for later use.
-In remaining marinade,add lemon juice,gram flour,orange food color & whisk until well combined.
-Add boiled potatoes,tomatoes,capsicum,onion & mix well.
-Skew vegetables & potatoes on a wooden skewer (makes 18).
-On a non-stick griddle,add cooking oil & fry skewers on medium flame from all sides until golden brown.
Prepare Tandoori Pulao:
-In a pot,add clarified butter & let it melt.
-Add cinnamon stick,cloves,black peppercorns,cumin seeds & mix well.
-Add onion,mix well & fry until light golden.
-Add green chillies,ginger garlic paste,reserved tandoori masala,mix well & cook for 1-2 minutes.
-Add fresh coriander & mix well.
-Add water,chicken cube,mix well & bring it to boil.
-Add rice & mix well.
-Add pink salt,mix well & cook on high flame until water is reduced (3-4 minutes),cover with kitchen cloth,lid & steam cook on low flame for 10-12 minutes.
-On serving platter,add tandoori pulao & tandoori aloo skewers.
-Give coal smoke for 2 minutes & serve!

-Bowl mein dahi,paprika powder,dhania powder,pink salt,zeera powder,haldi powder,garam masala powder,lal mirch powder,saunf powder,kasuri methi,kala namak aur adrak lehsan paste dal ker ache tarhan whisk ker lein.
-1/4 Cup tayyar marinade ko bad mein use kernay kliya side per rakh dein.
-Remaining marinade mein lemon juice,baisan aur orange food color dal ker ache tarahn whisk ker lein.
-Boiled aloo,tamatar,shimla mirch aur pyaz dal ker ache tarhan mix ker lein.
-Vegetables & potatoes ko wooden skewers per laga lein (makes 18).
-Non-stick tawa per cooking oil dal dein aur skewers ko darmiyani ancch per tamam sides sa golden-brown ho janay tak fry ker lein.
Prepare Tandoori Pulao:
-Pot mein ghee dal ker melt ker lein.
-Darchini,laung,sabut kali mirch aur zeera dal ker ache tarhan mix ker lein.
-Pyaz dald ein aur light golden ho janay tak fry ker lein.
-Hari mirchein,adrak lehsan paste aur reserved tandoori masala dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Hara dhania dal ker ache tarhan mix ker lein.
-Pani aur chicken cube dal ker ache tarhan mix karein aur ubal anay dein.
-Chawal dal ker mix ker lein.
-Pink salt dal ker ache tarhan mix karein aur tez ancch per pani reduce ho janay tak paka lein (3-4 minutes),kitchen cloth aur lid sa cover ker lein aur halki ancch per 10-12 minutes kliya paka lein.
-Serving platter mein tandoori pulao & tandoori aloo skewers dal dein.
-2 minute kliya koyla ka dhuwan dein & serve karein!
