Ingredients:
Prepare Tamatar ka Khatta:
- Tamatar (Tomatoes) cubes ½ kg
- Imli pulp (Tamarind pulp) 3 tbs
- Water 2 Cups
- Namak (Salt) 1 tsp or to taste
- Haldi powder (Turmeric powder) ½ tsp
- Zeera powder (Cumin powder) ½ tsp
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Dhania powder (Coriander powder) ½ tsp
- Water 1 litre
- Curry patta (Curry leaves) 5-6
- Hara dhania (Fresh coriander) chopped 1-2 tbs
Prepare Tarka:
- Cooking oil 2 tbs
- Lehsan (Garlic) chopped 1 tbs
- Methi dana (Fenugreek seeds) ¼ tsp
- Zeera (Cumin seeds) ½ tsp
- Raidana (Mustard seeds) ½ tsp
- Sukhi lal mirch (Dried red chillies) 2-3
- Curry patta (Curry leaves) 12-15
Prepare Bhindi ki Sabzi:
- Cooking oil 3 tbs
- Zeera (Cumin seeds) 1 tsp
- Pyaz (Onion) sliced 1 medium
- Adrak lehsan paste (Ginger garlic paste) 1 tsp
- Bhindi (Okra) ½ kg
- Namak (Salt) ½ tsp or to taste
- Haldi powder (Turmeric powder) ½ tsp
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Chaat masala ½ tsp
- Zeera powder (Cumin powder) ½ tsp
- Lal mirch (Red chilli) crushed ½ tsp
- Hara dhania (Fresh coriander) chopped 1-2 tbs
Directions:
Prepare Tamatar ka Khatta:
In a pot,add tomatoes,tamarind pulp,water,mix well & bring it to boil,cover & cook on medium flame until tomatoes are tender (7-8 minutes) then strain with the help of strainer,discard the residues and transfer the juice to the same pot & turn on the flame.
Add salt,turmeric powder,cumin powder,red chilli powder,coriander powder,water,mix well & bring it to boil.
Add curry leaves,fresh coriander,cover & cook on low flame for 10-12 minutes.
Prepare Tarka:
In a small frying pan,add cooking oil,garlic & mix well.
Add fenugreek seeds,cumin seeds,mustard seeds,dried red chillies,curry leaves & mix well.
Add prepared tarka in tamatar ka khatta,mix well & serve!
Prepare Bhindi ki Sabzi:
In a wok,add cooking oil,cumin seeds & mix well.
Add onion,mix well & sauté until translucent.
Add ginger garlic paste & mix well.
Add okra,mix well & cook on medium flame for 4-5 minutes and mix continuously.
Add salt,turmeric powder,red chilli powder,chaat masala,cumin powder,red chilli crushed,mix well & cook on low flame until done (5-6 minutes).
Add fresh coriander,cover & simmer on low flame for 2 minutes.
Serve tamatar ka khatta with bhindi ki sabzi & boiled rice.

- Hara dhania (Fresh coriander) chopped 1-2 tbs
Directions:
Prepare Tamatar ka Khatta:
Pot mein tamatar,imli pulp aur pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur darmiyani ancch per tamatar naram ho janay tak paka lein (7-8 minutes) phir strainer ki madad sa strain ker lein aur resides ko discard ker lein aur juice ko us he pot mein dal dein aur chulha on ker lein.
Namak,haldi powder,zeera powder,lal mirch powder,dhania powder aur pani dal ker ache tarhan mix karein aur ubal anay dein.
Curry patta aur hara dhania dal ker dhak dein aur halki anccj per 10-12 minutes kliya paka lein.
Prepare Tarka:
Chotay frying pan mein cooking oil aur lehsan dal ker ache tarhan mix karein.
Methi dana,zeera,rai dana,sukhi lal mirch aur curry patta dal ker ache tarhan mix ker lein.
Tayyar tarka ko tamatar ka khatta mein dal ker ache tarhan mix ker lein & serve karein!
Prepare Bhindi ki Sabzi:
Karahi mein cooking oil aur zeera dal ker ache tarhan mix karein.
Pyaz dal ker ache tarhan mix karein aur translucent hunay tak sauté ker lein.
Adrak lehsan paste dal ker ache tarhan mix karein.
Bhindi dal ker ache tarhan mix karein aur darmiyani ancch per 4-5 minutes kliya paka lein aur musalsal mix kertay rahein.
Namak,haldi powder,lal mirch powder,chaat masala,zeera powder aur lal mirch crushed dal ker ache tarhan karein aur halki ancch per gul janay tak paka lein (5-6 minutes).
Hara dhania dal ker dhak dein aur 2 minutes kliya dum per rakh dein.
Tamatar ka khatta ko bhindi ki sabzi aur boiled chawal ka saath serve karein!
