Ingredients:
-Maida (All-purpose flour) ½ Cup
-Cornflour ½ Cup
-Baking powder ½ tsp
-Namak (Salt) ½ tsp or to taste
-Anda (Egg) 1
-Water ¾ Cup or as required
-Baingan (Eggplant) long & thin 400g
-Cooking oil for frying
-Cooking oil 1-2 tbs
-Tomato ketchup 4 tbs
-Gochujang hot pepper paste 1 tbs (optional) substitute: Sriracha sauce 1-2 tbs
-Soy sauce 2 tbs
-Sirka (Vinegar) 2 tbs
-Sugar 1 tbs
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Namak (Salt) ¼ tsp or to taste
-Cornflour 1 tsp
-Water ½ Cup or as required
-Til (Sesame seeds) 1 tsp
-Hara pyaz (Spring onion) leaves chopped
Directions:
-In a bowl,add all-purpose flour,cornflour,baking powder,salt,egg,water,whisk well & set aside.
-Peel eggplant & cut half inch thick slices.
-In a wok,heat cooking oil,dip eggplant slices in prepared batter & fry on medium flame until golden & set aside.
-In a wok,add cooking oil,tomato ketchup,gochujang hot pepper paste,soy sauce,vinegar,sugar,red chilli powder,salt,cornflour,water & whisk well.
-Turn on the flame & cook on low flame until it thickens (1-2 minutes).
-Add fried eggplant & mix gently.
-Add sesame seeds,spring onion leaves.
-Garnish with green onion leaves & serve with rice!

-Bowl mein maida,cornflour,baking powder,namak,anda aur panid al ker ache tarhan whisk ker lein & side per rakh dein.
-Baingan ko peel ker ka half inch thick slices mein cut ker lein.
-Karahi mein cooking oil garam karein,baingan ka slices ko tayyar batter mein dip karein aur darmiyani ancch per golden ho janay tak fry ker lein & side per rakh dein.
-Karahi mein cooking oil,tomato ketchup,gochujang hot pepper paste,soy sauce,sirka,cheeni,lal mirch powder,namak,cornflour aur pani dal ker ache tarhan whisk ker lein.
-Chulha on karein aur halki ancch per garha ho janay tak paka lein (1-2 minutes).
-Fried baingan dal ker gently mix ker lein.
-Til aur hara pyaz leaves dal dein.
-Hara pyaz leaves sa garnish ker ka rice ka saath serve karein!
