Ingredients:
- Tamatar (Tomatoes) 2 medium
- Hari mirch (Green chilies) 2
- Hara pyaz (Green onion) 1 stalk
- Pyaz (Onion) 2 medium
- Phindi (Okra) 125 gms
- Lal mirch powder (Red chili powder) ¼ tsp or to taste
- Chaat masala ¼ tsp
- Namak (Salt) ¼ tsp or to taste
- Aloo (Potatoes) peeled 2 large
- Lal mirch powder (Red chili powder) ¼ tsp or to taste
- Chaat masala ¼ tsp
- Namak (Salt) ¼ tsp or to taste
- Cooking oil for frying
- Lal mirch powder (Red chili powder) ½ tsp or to taste
- Lal mirch (Red chili) crushed ½ tsp
- Haldee powder (Turmeric powder) ¼ tsp
- Namak (Salt) ½ tsp or to taste
- Dhania powder (Coriander powder) ¼ tsp
- Anday (Eggs) 6
Directions:
Chop tomatoes,green chilies,green onion,onion & set aside.
Cut okra and take out in a bowl,add red chili powder,chaat masala,salt,mix well & set aside.
Cut potatoes into small cubes and put them in a bowl.
Add red chili powder,chaat masala,salt,mix well & set aside.
In wok,add cooking oil and fry potatoes until light golden & take out in a bowl.
In the same wok,add okra and fry on medium flame until crispy & take out in a bowl.
In the same wok,add onion and sauté until translucent.
Add green chilies and fry for 2 minutes.
Add tomatoes and mix well,cover and cook on low flame until tomatoes are soft (approx. 4-5 minutes).
Add red chili powder,red chili crushed,turmeric powder,salt,coriander powder,mix well and cook for 1-2 minutes.
Add green onion and mix well.
Add eggs one by one,mix well and cook on low flame for 6-8 minutes and mix continuously.
On serving plate,add egg mixture,fried potatoes,fried okra & serve!

Phindi ko cut ker lein aur bowl mein nikal lein,lal mirch powder,chaat masala aur namak dal ker ache tarhan mix karein & side per rakh dein.
Aloo ko small cubes mein cut ker lein aur bowl mein nikal lein.
Lal mirch powder,chaat masala aur namak dal ker ache tarhan mix karein & side per rakh dein.
Karhai mein cooking oil dal dein aur aloo ko light golden hunay tak fry ker lein aur bowl mein nikal lein.
Us he karhai mein bhindi dal dein aur darmiyani ancch per crispy hunay tak fry ker lein aur bowl mein nikal lein.
Us he karhai mein pyaz dal dein aur translucent hunay tak sauté ker lein.
Hari mirch dal ker 2 minutes kliya fry ker lein.
Tamatar dal ker ache tarhan mix karein aur halki ancch per tamatar naram hunay tak paka lein (approx. 4-5 minutes).
Lal mirch powder,lal mirch crushed,haldee powder,namak aur dhania powder dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
Hara pyaz dal ker ache tarhan mix karein.
Anday shamil karein aur ache tarhan mix ker ka halki ancch per 6-8 minutes kliya paka lein aur musalsal chamcha chalatay rahein.
Serving plate mein egg mixture,fried aloo aur bhindi dal ker serve karein.
