Stuffed Sriracha Chicken Omelette

Ingredients:

-Sriracha sauce 3 tbs

-Soy sauce 1 tbs

-Lemon juice ½ tsp

-Honey 1 tsp

-Tomato ketchup 1 tbs

-Cooking oil 2 tbs

-Pyaz (Onion) chopped ½ Cup

-Lehsan (Garlic) chopped 2 tsp

-Boneless chicken small cubes 300g

-Paprika powder ½ tsp

-Himalayan pink salt ½ tsp or to taste

-Kali mirch (Black pepper) crushed ¼ tsp

-Shimla mirch (Capsicum) cubes ¼ Cup

-Hara pyaz (Spring onion) leaves chopped 1-2 tbs

-Anday (Eggs) 2-3

-Water 1 tbs

-Himalayan pink salt 1 pinch or to taste

-Cooking oil 1 tbs

Directions:

-In a bowl,add sriracha sauce,soy sauce,lemon juice,honey,tomato ketchup,mix well & set aside.

-In a frying pan,add cooking oil,onion,garlic & sauté for a minute.

-Add chicken & mix well until it changes color.

-Add paprika powder,pink salt,black pepper crushed,mix well & cook for 2-3 minutes.

-Add prepared sauce,mix well & cook for a minute & reserve 1-2 tbs for later use.

-Add capsicum,spring onion leaves,mix well & set aside.

-In a bowl,add eggs,water,pink salt,whisk well & set aside

-On non-stick griddle,add cooking oil & spread evenly.

-Add whisked eggs,spread evenly & cook on low flame until done (2 minutes).

-Turn off the flame,add prepared chicken filling in the center & fold all four sides to make a square shape.

-On serving plale,place stuffed omelette,cut the omelette from the center in plus shape & open it.

-Pour reserved sauce,sprinkle green onion leaves & serve with sriracha sauce (makes 2).
