Ingredients:
Prepare Yogurt Sauce:
-Dahi (Yogurt) hung ½ Cup
-Mixed herbs ¼ tsp
-Lal mirch (Red chilli) crushed ¼ tsp
-Kali mirch powder (Black pepper powder) ¼ tsp
-Namak (Salt) ¼ tsp or to taste
Prepare Spiced (Masala) Chickpea:
-Cooking oil 1-2 tbs
-Safed chanay (Chickpeas) boiled 1 & ½ Cup
-Paprika powder 1 tsp
-Lehsan powder (Garlic powder) 1 tsp
-Dried oregano 1 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Namak (Salt) ½ tsp or to taste
-Lemon juice 1 tbs or to taste
Prepare Spinach Crepes:
-Palak (Spinach) leaves 120g
-Maida (All-purpose flour) sifted ¾ Cup (100g)
-Anday (Eggs) 2
-Kali mirch powder (Black pepper powder) ½ tsp
-Namak (Salt) to taste ½ tsp or to taste
-Doodh (Milk) 1 Cup
-Mayonnaise
Directions:
Prepare Yogurt Sauce:
-In a bowl,add yogurt,mixed herbs,red chilli crushed,black pepper powder,salt,whisk well & set aside.
Prepare Spiced (Masala) Chickpea:
-In frying pan,add cooking oil,chickpeas,paprika powder,garlic powder,dried oregano,red chilli crushed,salt & mix well for 2-3 minutes until chickpeas are coated with spices.
-Add lemon juice,mix well,cook for a minute & set aside.
Prepare Spinach Crepes:
-In a blender jug,add spinach,all-purpose flour,eggs,black pepper powder,salt,milk & blend well.
-Grease 7” inch frying pan with cooking oil,pour 1/3 cup of prepared batter,spread evenly & cook until it’s just set (1-2 minutes),flip & continue to cook until other side is done (makes 6-7).
Assembling:
-On a crepe,add & spread prepared yogurt sauce,prepared spiced (masala) chickpea & fold the crepe.
-Drizzle mayonnaise & serve!

Prepare Spiced (Masala) Chickpea:
-Frying pan mein cooking oil,safed chanay,paprika powder,lehsan powder,dried oregano,lal mirch crushed aur namak dal ker 2-3 minutes kliya ache tarhan mix karein ta ka chanay spices mein coat ho jayein.
-Lemon juice dal ker ache tarhan mix karein aur ek minute kliya paka lein & side per rakh dein.
Prepare Spinach Crepes:
-Blender jug mein palak,maida,anday,kali mirch powder,namak aur doodh dal ker ache tarhan blend ker lein.
-7” inch frying pan ko cooking oil sa grease karein,1/3 cup tayyar batter dal ker evenly pheela lein aur set ho janay tak 1-2 minute kliya paka lein phir flip karein aur dosri side ko paka lein (makes 6-7).
Assembling:
-Crepe per tayyar dahi sauce & tayyar spiced (masala) chickpea dal ker crepe ko fold ker lein.
-Mayonnaise drizzle ker ka serve karein!
