Ingredients:
Prepare Aloo Samosa:
-Cooking oil 2-3 tbs
-Ajwain (Carom seeds) ¼ tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Namak (Salt) 1 & ½ tsp or to taste
-Sabut dhania (Coriander seeds) crushed ½ tbs
-Chaat masala ½ tsp
-Haldi powder (Turmeric powder) ½ tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Aloo (Potatoes) peeled & boiled 5 medium
-Hari mirch (Green chilli) chopped ½ tbs
-Hara dhania (Fresh coriander) chopped ½ tbs
-Maida (All-purpose flour) sifted 2 & ½ Cups
-Namak (Salt) 1 & ½ tsp or to taste
-Zeera (Cumin seeds) 1 tsp
-Ajwain (Carom seeds) 1 tsp
-Ghee (Clarified butter) 4 tbs
-Water ¾ Cup or as required
-Cooking oil for frying
Prepare Tawa Cholay:
-Cooking oil 2 tbs
-Zeera (Cumin seeds) ½ tsp
-Pyaz (Onion) chopped 1 medium
-Tamatar (Tomato) chopped 1 medium
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Namak (Salt) ½ tsp or to taste
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Garam masala powder ¼ tsp
-Chicken powder ½ tsp
-Zeera powder (Cumin powder) ½ tsp
-Saunf powder (Fennel powder) ¼ tsp
-Hari chutney (Green sauce) 1 tbs
-Imli chutney (Tamarind sauce) 1 tbs
-Safed chanay (Chickpeas) boiled along with its water) 1 & ½ Cup
-Fried aloo samosa 2
-Imli ka pani (Tamarind water) 3-4 tbs or as required
-Water 2-3 tbs or as required
-Hara dhania (Fresh coriander) chopped
Assembling:
-Fried samosa
-Dahi (Yogurt) whisked
-Pyaz (Onion) rings
-Lal mirch (Red chilli) crushed
-Chaat masala
-Nimco sev
-Hara dhania (Fresh coriander) chopped
Directions:
Prepare Aloo Samosa:
-In a frying pan,add cooking oil,carom seeds,red chilli powder salt,coriander seeds,chaat masala, turmeric powder,cumin seeds,mix well & cook on low flame for 30 seconds.
-Add potatoes,mix well & mash coarsely with the help of masher.
-Add green chilli,fresh coriander & mix well.Samosa filling is ready!
-Let it cool.
-In a bowl,add all-purpose flour,salt,cumin seeds,carom seeds & mix well.
-Add clarified butter and mix well until it crumbles.
-Gradually add water & knead until dough is formed,cover & let it rest for 15 minutes.
-Stretch & knead dough again for 2-3 minutes.
-Take a small dough (70g),make a ball and roll out in oval shape with the help of rolling pin then cut into two pieces.
-On one side of dough,apply water,join two sides/edges to make a cone and press gently to seal the cone.
-Fill the cone with potato filling,apply water on the edges and bring the edges together and seal the edges properly.
-Prepare the remaining samosas similarly (makes 17-18).
-In a wok,heat cooking oil and fry on very low flame until golden.
Prepare Tawa Cholay:
-On a griddle,add cooking oil,cumin seeds & mix well.
-Add onion & sauté until translucent.
-Add tomatoes,mix well & cook on medium flame for 1-2 minutes.
-Add ginger garlic paste & mix well.
-Add salt,red chilli powder,garam masala powder,chicken powder,cumin powder,fennel powder & mix well.
-Add green sauce,tamarind sauce & mix well.
-Add chickpeas along with its water,mix well & cook for 1-2 minutes.
-Add 2 fried samosas & break them with the help of spoon.
-Add tamarind water & mix well.
-Add water,mix well & cook for a minute.
-Add fresh coriander.
Assembling:
-On a serving plate,break samosa,add prepared tawa chaat,yogurt,onion rings,sprinkle red chilli crushed,chaat masala,nimco sev,fresh coriander,red chilli crushed & serve!

-Aloo dal ker ache tarhan mix karein aur masher ki madad sa coarsely mash ker lein.
-Hari mirch aur hara dhania dal ker ache tarhan mix karein.Samosa filling tayyar hai.
-Thanda ker lein.
-Bowl mein maida,namak,zeera aur ajwain dal ker ache tarhan mix karein.
-Ghee dal dein aur crumble hunay tak ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 15 minutes kliya chor dein.
-Dough ko 2-3 minutes kliya stretch & knead ker lein.
-Chota dough lein (70g) aur ball bana lein aur oval shape mein rolling pin ki madad sa bail lein aur two pieces mein cut ker lein.
-Dough ki ek side per pani laga lein,do sides/edges ko join ker ka cone bana lein aur halka sa press ker ka cone ko seal ker lein.
-Cone mein potato filling bhar dein,edges per pani laga ker edges ko ek saath ache tarhan seal ker lein.
-Baqi samosay bhi asa he tayyar ker lein (17-18).
-Karahi mein cooking oil garam karein aur bohat halki ancch per golden ho janay tak fry ker lein.
Prepare Tawa Cholay:
-Tawa per cooking oil aur zeera dal ker ache tarhan mix karein.
-Pyaz dal dein aur translucent hunay tak sauté ker lein.
-Tamatar dal ker ache tarhan mix karein aur darmiyani ancch per 1-2 minutes kliya paka lein.
-Adrak lehsn paste dal ker ache tarhan mix karein.
-Namak,lal mirch powder,garam masala piowder,chicken powder,zeera powder aur saunf powder dal ker ache tarhan mix ker lein.
-Hari chutney aur imli chutney dal ker ache tarhan mix ker lein.
-Safed chanay pani ka saath shamil karein aur 1-2 minutes kliya paka lein.
-2 fried samosay dal ker spoon ki madad sa break ker lein.
-Imli ka pani dal ker ache tarhan mix ker lein.
-Pani dal ker mix karein aur ek minute kliya paka lein.
-Hara dhania dal dein.
Assembling:
-Serving plate mein samosa tor ker dal dein,tayyar tawa chaat,dahi,pyaz,lal mirch crushed,chaat masala,nimco sev,hara dhana aur lal mirch crushed dal ker serve karein!
