Ingredients:
Prepare Hari Chutney:
-Podina (Mint leaves) ½ Cup
-Hara dhania (Fresh coriander) 1 Cup
-Hari mirch (Green chillies) 3-4
-Lehsan (Garlic) cloves 3-4
-Zeera (Cumin seeds) 2 tsp
-Namak (Salt) ½ tsp or to taste
-Tatri (Citric acid) ¼ tsp
-Lemon juice 1 tbs
-Dahi (Yogurt) 1 Cup
Prepare Daal Kabab:
-Chana daal (Split bengal gram) 300g (soaked for 2 hours)
-Water 1 Cup or as required
-Sabut lal mirch (Button red chillies) 7-8
-Badi elaichi (Black cardamom) 2
-Darchini (Cinnamon stick) 1
-Namak (Salt) 1 tsp or to taste
-Zeera (Cumin seeds) 1 tbs
-Garam masala powder 1 tsp
-Laung powder (Clove powder) ¼ tsp
-Lehsan (Garlic) cloves 3-4
-Hari mirch (Green chillies) 3-4

-Chawal ka atta (Rice flour) 3 tbs
-Anday (Eggs) 3-4
-Namak (Salt) ½ tsp or to taste
-Ghee (Clarified butter) 1 tsp

-Burger buns as required
-Tomato ketchup
-Coleslaw
-Kheera (Cucumber) slices
-Pyaz (Onion) rings
-Chaat masala
-Tamatar (Tomato) slice
-Ghee (Clarified butter) 1 tsp
Directions:
Prepare Hari Chutney:
-In a blender jug,add mint leaves,fresh coriander,green chillies,garlic,cumin seeds,salt,citric acid, lemon juice,yogurt,blend well & set aside.
Prepare Daal Kabab:
-In a saucepan,add split bengal gram,water,button red chillies,black cardamom,cinnamon stick,salt, cumin seeds,garam masala powder,clove powder,garlic,mix well & bring it to boil,cover & cook on low flame until tender (25-30 minutes).
-Discard black cardamom & cinnamon stick.
-Let it cool completely.
-In a chopper,add boiled lentil mixture,green chillies,mint leaves,fresh coriander,rice flour & chop well.
-With the help of wet hands,take a small quantity of mixture (40g) & make kababs of equal sizes (makes 18-20).
-Can be stored in an airtight container for up to 2 weeks in freezer.
-In a bowl,add eggs,salt & whisk well until foamy.
-Heat griddle,add clarified butter & let it melt.
-Add whisked eggs,place daal kabab & covered with whisked egg & cook on medium flame from both sides until golden.
-On same griddle,add clarified butter & let it melt,cut bun from the middle & toast bun from both sides.
-On one side of bun,add & spread prepared hari chutney & on another bun,add & spread tomato ketchup.
-On green chutney,add coleslaw,cucumber slices,daal kabab,onion rings,chaat masala,tomato slice & cover with top bun to make a bun kabab.
-Add clarified butter & toast bun kabab from both sides.
-Cut in half & serve with prepared green chutney & tomato ketchup!

Prepare Daal Kabab:
-Saucepan mein chana daal,pani,sabut lal mirch,badi elaichi,darchini,namak,zeera,garam masala powder,laung powder aur lehsan dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per gul janay tak paka lein (25-30 minutes).
-Badi elaichi aur darchini ko nikal ker discard ker dein.
-Thanda ker lein.
-Chopper mein boiled daal ka mixture,hari mirchein,podina,hara dhania aur chawal ka atta dal ker ache tarhan chop ker lein.
-Wet hands ki madad sa kabab ka mixture (40g) lein aur ek jaisay sizes ka kabab tayyar ker lein (makes 18-20).
-Airtight container mein dal ker 2 weeks kliya freezer mein store ker saktay han.
-Bowl mein anday aur namak dal dein aur foamy ho janay tak ache tarhan whisk ker lein.
-Tawa garam karein aur ghee dal ker melt ker lein.
-Pheetay hoye anda dal ker daal kabab rakh dein aur upper sa pheeta huwa anda dal ker cover ker lein aur darmiyani ancch per dono sides sa godlden ho janay tak fry ker lein.
-Us he tawa per ghee dal ker melt ker lein aur bun ko middle mein sa cut ker ka doni sides sa toast ker lein.
-Bun ka ek side per tayyar hari chutney dal ker pheela lein aur dosray bun mein tomato ketchup dal ker pheela lein.
-Hari chutney per coleslaw,kheera slices,daal kabab,pyaz rings,chaat masala aur tamatar ka slice rakh dein aur dosray bun sa cover ker ka bun kabab tayyar ker lein.
-Ghee dal dein aur bun kabab ko dono sides sa toast ker lein.
-Half mein cut karein aur tayyar hari chutney aur tomato ketchup ka saath serve karein!
