Ingredients:
- Hara dhania (Fresh coriander) 1/4 Cup
- Lehsan (Garlic) cloves 7-8
- Hari mirch (Green chillies) 3-4
- Sabut lal mirch (Button red chillies) 3-4
- Podina (Mint leaves) 1/4 Cup
- Tatri (Citric acid) 1/4 tsp
- Namak (Salt) 1/4 tsp or to taste
- Zeera (Cumin seeds) roasted & crushed 1 tbs
- Lemon juice 2 tbs
- Dahi (Yogurt) 1 & ½ Cup
- Chicken boneless cubes 150g
- Chana daal (Split Bengal gram) 250g (soaked overnight)
- Zeera (Cumin seeds) 1 tbs
- Sabut lal mirch (Button red chillies) 9-10
- Namak (Salt) 1 tsp or to taste
- Darchini (Cinnamon stick) 1
- Badi elaichi (Black cardamom) 1
- Water 1 & ½ Cup
- Aloo (Potatoes) boiled 250g
- Kali mirch powder (Black pepper powder) 1 tsp
- Laung powder (Clove powder) ½ tsp
- Garam masala powder 1 tbs
- Podina (Mint leaves) 2 tbs
- Hara dhania (Fresh coriander) 2 tbs
- Hari mirch (Green chillies) 1-2
- Anday (Eggs) 4
- Ghee 1 tbs
- Buns
- Pyaz (Onion)
- Chaat masala
- Coleslaw
- Tomato ketchup
Directions:
In blender,add fresh coriander,garlic,green chilli,button red chillies,mint leaves,citric acid,salt,cumin seeds,lemon juice,yogurt & blend well.Bun kabab chutney is prepared.
In pot,add chicken,split lentil gram,cumin seeds,button red chillies,salt,cinnamon stick,black cardamom, water,mix well and bring it to boil,cover and cook on low flame until 90 % done (approx.20 minutes).
Remove scum & discard whole spices.
Let it cool.
In chopper,add lentil mixture,potatoes,black pepper powder,cloves powder,garam masala powder,mint leaves,fresh coriander,green chillies and chop until well combined.
Wet hands with water,take a mixture and make kababs of equal sizes (makes 14-15).
In bowl,add eggs and beat until fluffy.
On griddle,add ghee and let it melt.
Now dip kababs into beaten eggs and fry from both sides until golden brown.
Toast the buns then add & spread bun kabab chutney,add onion,chaat masala,kabab,coleslaw and tomato ketchup.
On top bun,add & spread bun kabab chutney,cover and again fry bun kabab.
Serve with chutney!

Directions:
Blender mein hara dhania,lehsan,hari mirch,sabut lal mirch,podina,tatri,namak,zeera,lemon juice aur dahi dal ker ache tarhan blend ker lein.Bun kabab chutney tayyar hai.
Pot mein chicken,chana daal,zeera,sabut lal mirch,namak,darchini,badi elaichi aur pani dal ker ache tarhan mix karein aur ubal anay ka bad dahk dein aur halki ancch per 90% gul janay tak paka lein (approx.20 minutes).
Scum ko remove karein aur whole spices ko discard ker dein.
Thanda ker lein.
Chopper mein chanay ka mixture,aloo,kali mirch powder,laung powder,garam masala powder,podina, hara dhania aur hari mirch dal ker ache tarhan chop ker lein.
Haath ko pani sa geela karein aur mixture ko la ker ek jaisay sizes ka kabab tayyar ker lein (makes 14-15).
Bowl mein anday dal dein aur fluffy hunay tak beat ker lein.
Tawa per ghee dal ker garam karein.
Ab kabab ko pheetay hoye anday mein dip karein aur dono sides sa golden brown huany tak fry ker lein.
Buns ko toast ker lein aur bun kabab chutney dal ker pheela lein,pyaz,chaat masala,kabab,coleslaw aur tomato ketchup dal dein.
Top bun per bun kabab chutney dal ker pheela aur cover ker ka bun kabab ko dubara fry ker lein.
