Ingredients:
- Zeera (Cumin seeds) 2 tsp
- Sabut dhania (Coriander seeds) 1 tbs
- Sabut kali mirch (Black peppercorns) 15-20
- Laung (Cloves) 4-5
- Darchini (Cinnamon sticks) 2
- Hari elaichi (Green cardamom) 2-3
- Sabut lal mirch (Button red chillies) 5-6
- Adark (Ginger) 1 inch piece
- Lehsan (Garlic) slices 5-6 cloves
- Pyaz (Onion) fried ½ Cup
- Water 3-4 tbs
- Tamatar (Tomatoes) 2 small
- Dahi (Yogurt) whisked 1 Cup
- Namak (Salt) 1 tsp or to taste
- Paprika powder 2 tsp
- Haldi powder (Turmeric powder) ½ tsp
- Chicken mix boti 750g
- Cooking oil 1/3 Cup
- Water ¼ Cup or as required
- Dahi (Yogurt) whisked 1 Cup
- Namak (Salt) ¼ tsp or to taste
- Pyaz (Onion) rings
- Hara dhania (Fresh coriander) chopped
- Podina (Mint leaves) chopped
- Hari mirch (Green chilli) sliced
- Hara dhania (Fresh coriander) chopped

- Coal for smoke
Directions:
In frying pan,add cumin seeds,coriander seeds,black peppercorns,cloves,cinnamon sticks,green cardamom,button red chillies,mix well & dry roast until fragrant.
Let it cool
In spice mixer,add roasted spices and grind to coarse powder.
Add ginger,garlic,fried onion,water and blend to make a thick paste & set aside.
In blender jug,add tomatoes,blend to make puree & set aside.
In a bowl,add spices paste,pureed tomato,yogurt,salt,paprika powder,turmeric powder and mix well.
Add chicken and mix well,cover & marinate for 30 minutes.
In a wok,add cooking oil,marinated chicken (reserve marinade for later use),mix well and cook for 5-6 minutes.
Now add reserved marinade and mix well.
Add water and mix well,cover and cook on low flame until chicken is tender (18-20 minutes) then cook on high flame until oil separates.
In yogurt,add salt,whisk well & set aside.
In serving dish,add chicken with gravy,onion rings,fresh coriander,mint leaves,green chilli,prepared yogurt,add fresh coriander & green chilli.
Give coal smoke for 2 minutes & serve!

Directions:
Frying pan mein zeera,sabut dhania,sabut kali mirch,laung,darchini,hari elaichi aur sabut lal mirch dal ker acha tarhan mix karein aur khushbu anay tak dry roast ker lein.
Thanda ker lein.
Spice mixer mein roasted spices dal dein aur ache tarhan grind ker ka coarse powder tayyar ker lein.
Adrak,lehsan,fried pyaz aur pani dal dein aur ache tarhan blend ker ka thick paste tayyar ker lein & side per rakh dein.
Blender jug mein tamatar dal dein aur blend ker ka puree tayyar ker lein & side per rakh dein.
Bowl mein spices paste,pureed tamatar,dahi,namak,paprika powder aur haldi powder dal ker ache tarhan mix ker lein.
Chicken dal ker ache tarhan mix karein aur dhak ker 30 minutes kliya marinate ker lein.
Karahi mein cooking oil aur marinated chicken (marinade ko bad mein use kernay kliya side per rakh dein) dal ker ache tarhan mix karein aur 5-6 minutes kliya paka lein.
Ab reserved marinade dal ker ache tarhan mix ker lein.
Pani dal ker ache tarhan mix karein aur dhak ker halki ancch per chicken gul janay tak paka lein (18-20 minutes) phir tez ancch per oil alag ho janay tak paka lein.
Dahi mein mein namak dal ker ache tarhan whisk ker lein 7 side per rakh dein.
Serving dish mein chicken gravy,pyaz rings,hara dhania,podina,hari mirch,tayyar dahi,hara dhania aur hari mirch dal dein.
