Ingredients:
- Dahi (Yogurt) thick ½ Cup
- Hari mirch (Green chilli) paste 1 tsp
- Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
- Zeera powder (Cumin powder) ½ tsp
- Namak (Salt) 1 tsp or to taste
- Kali mirch powder (Black pepper powder) ½ tsp
- Safed mirch powder (White pepper powder) ½ tsp
- Dhania powder (Coriander powder) ½ tsp
- Chicken mix boti ½ kg
- Cooking oil 3-4 tbs
- Ghee (Clarified butter) ½ Cup
- Pyaz (Onion) sliced 2 medium
- Zeera (Cumin seeds) 1 tsp
- Badiyan ka phool (Star anise) 2
- Badi elaichi (Black cardamom) 2
- Tez paat (Bay leaves) 2
- Darchini (Cinnamon sticks) 2
- Hari mirch (Green chilli) paste 1 & ½ tbs
- Namak (Salt) 1 & ½ tsp or to taste
- Saunf powder (Fennel powder) 1 & ½ tsp
- Zeera powder (Cumin powder) 1 tsp
- Sabut dhania (Coriander seeds) crushed 1 tbs
- Jaifil powder (Nutmeg powder) ¼ tsp
- Safed mirch powder (White pepper powder) ½ tsp
- Kali mirch powder (Black pepper powder) 1 tsp
- Baking soda ¼ tsp
- Javitri powder (Mace powder) ¼ tsp
- Laung powder (Clove powder) 1/8 tsp
- Pakola Full Cream Milk 1 & ½ Cup
- Water 1 & ½ Cup or as required
- Chawal (Rice) basmati or sella ½ kg (soaked for 30 minutes)
- Hot water 2-3 tbs
- Garam masala powder ½ tsp
- Hari mirch (Green chillies) slit 3-4
- Charcoal for smoke
- Cooking oil
Directions:
In a bowl,add yogurt,green chilli paste,ginger garlic paste,cumin powder,salt,black pepper powder,white pepper powder,coriander powder and whisk well.
Add chicken and mix well,cover & marinate for 30 minutes.
In frying pan,add cooking oil and heat it.
Add marinated chicken and cook on medium flame for 2 minutes then cover and cook on low flame for 8-10 minutes and turn sides in between then cook on medium flame until it dries up & set aside.
In a pot,add clarified butter and let it melt.
Add onion and fry until golden brown and reserve half for layering & garnishing.
In remaining onion,add cumin seeds,star anise,black cardamom,bay leaves,cinnamon sticks and mix well.
Lower the flame while adding the spices,add green chilli paste,salt,fennel powder,cumin seeds,coriander seeds,nutmeg powder,white pepper powder,black pepper powder,baking soda,mace powder,clove powder & cook on low flame for a minute.
Add milk,water,mix well & bring it to boil.
Add rice,mix well and cook on medium flame for 4-5 minutes,cover & cook on low flame for 4-5 minutes.
Add hot water and place preheated grilled/tawa under the pot.
Add cooked chicken pieces,garam masala powder,fried onion (reserved half for garnishing),green chillies,cover & simmer on low flame for 6-8 minutes.
Give coal smoke for 2-3 minute.
Garnish with fried onion & serve!

Bowl mein dahi,hari mirch paste,,adrak lehsan paste,zeera powder,namak,kali mirch powder,safed mirch powder aur dhania powder dal ker ache tarhan whisk ker lein.
Chicken dal ker ache tarhan mix karein aur dhak ker 30 minutes kliya marinate ker lein.
Frying pan mein cooking oil dal ker garam karein.
Marinated chicken dal dein aur darmiyani ancch per 2 minutes kliya paka lein phir dhak dein aur halki ancch per 8-10 minutes kliya paka lein aur bech mein sides ko change ker lein phir darmiyani ancch per sukh janay tak paka lein & side per rakh dein.
Pot mein ghee dal ker melt ker lein.
Pyaz dal dein aur golden brown ho janay tak fry ker lein aur half ko layering & garnishing kliya reserve ker lein.
Remaining pyaz mein zeera,badiyan ka phool,badi elaichi,tez paat aur darchini dal ker ache tarhan mix ker lein.
Spice add kertay hoye chulha halka ker dein,hari mirch paste,namak,saunf,zeera,sabut dhania,jaifil powder,safed mirch powder,kali mirch powder,baking soda,javitri powder & laung powder dal dein aur halki ancch per ek minute kliya paka lein.
Doodh aur pani dal ker ache tarhan mix karein aur ubal anay dein.
Chawal dal ker ache tarhan mix karein aur darmiyani ancch per 4-5 minutes kliya paka lein aur dhak ker halki ancch per 4-5 minutes kliya paka lein.
Garam pani dal dein aur pot ka nichay garam tawa rakh dein.
Cooked chicken pieces,garam masala powder,fried pyaz (reserved half for garnishing) & hari mirchein dal dein aur dhak ker halki ancch per 6-8 minutes kliya dum per rakh dein.
2-3 minutes kliya koyla ka dhuwan dein.
Fried pyaz sa garnish ker ke serve karein!
