Ingredients:
Prepare Dry Garlic Spice Mix:
-Lehsan (Garlic) cloves 3-4
-Mongphali (Peanuts) roasted 1 tbs
-Khopra (Desiccated coconut) 1 tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tbs
-Iodized Himalayan pink salt ¼ tsp or to taste
Prepare Mint Chutney:
-Podina (Mint leaves) handful
-Hara dhania (Fresh coriander) handful
-Tamatar (Tomato) roughly chopped 1
-Hari mirch (Green chillies) 2
-Sabut lal mirch (Button red chillies) 2-3
-Lehsan (Garlic) cloves 2
-Iodized Himalayan pink Salt ¼ tsp or to taste
-Lemon juice 1 tbs
-Water 2-3 tbs or as required
Prepare Shami Tikki:
-Baisan (Gram flour) 1 Cup
-Iodized Himalayan pink salt ½ tsp or to taste
-Baking soda ¼ tsp
-Water 1 & ¼ Cup or as required
-Chana daal (Split bengal gram) soaked 1 Cup
-Beef qeema (Mince) 200g
-Zeera (Cumin seeds) roasted & crushed pepper ½ tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Dhania powder (Coriander powder) ½ tsp
-Iodized Himalayan pink salt 1 tsp or to taste
-Garam masala powder ½ tsp
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Sabut lal mirch (Button red chillies) 2-3
-Sabut kali mirch (Black peppercorns) 10-12
-Water 1 & ½ Cup
-Anday (Eggs) whisked 2 tbs
-Cooking oil 2-3 tbs
-Slider buns
-Makhan (Butter)
-Pyaz (Onion) rings
-Hari mirch (Green chilli) fried
Directions:
Prepare Dry Garlic Spice Mix:
-In a tadka pan,add garlic,peanuts,desiccated coconut,kashmiri red chilli powder,pink salt & dry roast on low flame for 1-2 minutes.
-Let it cool.
-In spice grinder,roasted mixture & grind coarsely (pulse 2-3).Dry garlic spice mix is ready!
Prepare Mint Chutney:
-In a jug,add mint leaves,fresh coriander,tomato,green chilli,red button chilli,garlic,pink salt,lemon juice, water & blend well.Mint chutney is ready!
Prepare Shami Tikki:
-In a bowl,add gram flour,pink salt,baking soda,gradullay add water,whisk until well combined & set aside.
-In a saucepan,add split bengal gram,beef mince,cumin seds,red chilli powder,coriander powder,pink salt,garam masala powder,ginger garlic paste,button red chillies,black peppercorns & water.
-Turn on the flame,mix well & bring it to boil,cover & cook on medium flame for 14-15 minutes (check in between) then cook on high flame until it dries up while mixing continuously.
-Let it cool.
-Transfer to a chopper & chop well.
-Add whisked egg & mix well.
-On a griddle,heat cooking oil,take 25g of kabab mixture & make patty of equal sizes (makes 14),dip into gram flour mixture & fry from both sides until golden & press gently.
-Cut slider buns from the center & toast it with butter.
-Add prepared mint chutney,sprinkle dry garlic spice mix,place fried patty,onion rings,fold & cover with top buns.
-Add fried green chilli,sprinkle dry garlic spice mix & serve!

Directions:

-Tadka pan mein lehsan, moongphali, khopra, kashmiri lal mirch powder aur pink namak daal kar low flame par 1-2 minute dry roast karen.
-Thanda hone dein.
-Spice grinder mein daal kar 2-3 pulse mein dardara grind karen. Dry garlic spice mix tayar hai!
Prepare Mint Chutney:
-Jug mein podina, hara dhania, tamatar, hari mirch, button lal mirch, lehsan, pink namak, lemon juice aur paani daal kar blend karen. Mint chutney tayar hai!
Prepare Shami Pao:
-Bowl mein besan, pink namak, baking soda daal kar halka halka paani add karte hue whisk karen aur side par rakh dein.
-Saucepan mein chana daal, beef qeema, zeera, lal mirch powder, dhania powder, pink namak, garam masala powder, adrak lehsan paste, button lal mirch, kali mirch aur paani daal kar flame on karen.
-Mix karen aur boil aane dein, ढak kar 14-15 minute medium flame par pakayen (beech mein check karen).
-Phir high flame par continuously mix karte hue sukhne tak paka len.
-Thanda hone dein.
-Chopper mein daal kar achi tarah chop karen.
-Whisked anda daal kar mix karen.
-Griddle par tel garam karen, 25g mixture le kar patty banayen (14 pattiyan), gram flour mixture mein dip kar ke dono sides se golden hone tak fry karen aur gently press karen.
-Slider buns ko center se cut karen aur butter se toast karen.
-Bun ke neeche wali side par mint chutney lagayen, dry garlic spice mix chhidken, fried patty rakh kar onion rings daalain aur bun cover karen.
-Upar se fried hari mirch aur thoda dry garlic spice mix chhidken aur serve karen.
