Ingredients:
Prepare Schezwan Chicken:
-Chicken julienne cut 500g
-Soy sauce 2 tbs
-Namak (Salt) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Cornflour 3 tbs
-Chawal ka atta (Rice flour) 2 tbs
-Kashmiri lal mirch (Kashmiri red chilli) soaked 1
-Thai red chillies 3-4
-Water 3-4 tbs
-Tomato ketchup 3 tbs
-Hoisin sauce 2 tbs
-Sugar ½ tbs
-Soy sauce 3 tbs
-Sirka (Vinegar) 1 tbs
-Namak (Salt) ½ tsp or to taste
-Cornflour 1 & ½ tbs
-Water ½ Cup or as required
-Cooking oi 3-4 tbs
-Adrak (Ginger) chopped 1 tbs
-Lehsan (Garlic) chopped ½ tbs
-Sukhi lal mirch (Dried red chillies) 3-4
-Pyaz (Onion) thick slices 1 Cup
-Yellow bell pepper julienne 1 Cup
-Hara pyaz (Spring onion) leaves chopped
Prepare Corn Fried Rice:
-Cooking oil 1-2 tbs
-Anday (Eggs) 2
-Cooking oil 2-3 tbs
-Lehsan (Garlic) chopped ½ tbs
-Gajar (Carrots) chopped ½ Cup
-Shimla mirch (Capsicum) chopped 1 Cup
-Corn kernels boiled 1 & ½ Cup
-Chawal (Rice) boiled 2 & ½ Cups
-Namak (Salt) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Safed mirch powder (White pepper powder) ½ tsp
-Chicken powder 1 tbs
-Sirka (Vinegar) 1 tbs
-Soy sauce 2 tbs
-Hara pyaz (Spring onion) chopped ½ Cup
Directions:
Prepare Schezwan Chicken:
-In a bowl,add chicken,soy sauce,salt,black pepper powder,cornflour,rice flour & mix well,cover & marinate for 15 minutes.
-In a spice mixer,add kashmiri red chilli,thai red chillies & water,grind well & set aside.
-In a bowl,add tomato ketchup,hoisin sauce,sugar,soy sauce,vinegar,salt,cornflour,water,mix well & set aside.
-In a wok,add cooking oil,marinated chicken & cook on medium flame until light golden (4-5 minutes) & set aside.
-In the same wok,add ginger,garlic & mix well.
-Add dried red chillies,mix well & sauté for a minute.
-Add blended chilli paste,mix well & cook for 1-2 minutes.
-Now add fried chicken & mix well.
-Add onion,yellow bell pepper & mix well.
-Add prepared sauce mixture,mix well & cook until sauce thickens (1-2 minutes) then cook on high flame for 1-2 minutes.
-Sprinkle spring onion leaves.
Prepare Corn Fried Rice:
-In a wok,add cooking oil,eggs & cook until it crumbles & set aside.
-In the same wok,add cooking oil,garlic & fry until light golden.
-Add carrots,capsicum,corn kernels,mix well & sauté for 1-2 minutes.
-Add boiled rice & mix well.
-Add salt,black pepper powder,white pepper powder,chicken powder & mix well.
-Add vinegar,soy sauce,spring onion & mix well.
-Add cooked egg & give it a good mix.
-Garnish with green onion leaves & serve schezwan chicken with corn fried rice!

-Spice mixer mein Kashmiri lal mirch,thai red chillies aur pani dal ker ache tarhan grind ker lein & side per rakh dein.
-Bowl mein tomto ketchup,hoisin sauce,cheeni,soy sauce,sirka,namak,cornflour aur pani dal ker ache tarhan mix ker lein & side per rakh dein.
-Karahi mein cooking oil aur marinated chicken dal dein aur darmiyani ancch per light golden ho janay tak paka lein (4-5 minutes) & side per rakh dein.
-Us he karahi mein adrak aur lehsan dal ker ache tarhan mix karein.
-Dried red chillies dal ker ache tarhan mix karein aur 1-2 minute kliya sauté ker lein.
-Blended red chilli paste dal ker ache tarhan mix karei aur 1-2 minutes kliya paka lein.
-Ab fried chicken dal ker ache tarhan mix karein.
-Pyaz aur yellow bell pepper dal ker mix ker lein.
-Tayyar sauce mixture dal ker ache tarhan mix karein aur garha ho janay tak paka lein (1-2 minutes) phir tez ancch per 1-2 minute kliya paka lein.
-Hara pyaz leaves dal dein.
Prepare Corn Fried Rice:
-Karahi mein cooking oil aur anday dal dein aur crumble ho janay tak paka lein & side per rakh dein.
-Us he karahi mein cooking oil aur lehsan dal dein aur light golden ho janay tak fry ker lein.
-Gajar,shimla mirch aur corn kernels dal ker ache tarhan mix karei aur 1-2 minutes kliya sauté ker lein.
-Boiled chawal dal ker ache tarhan mix ker lein.
-Namak,kali mirch powder,safed mirch powder aur chicken powder dal ker ache tarhan mix ker lein.
-Sirka,soy sauce aur hara pyaz dal ker ache tarhan mix ker lein.
-Cooked anda dal ker mix ker lein.
-Hara pyaz sa garnish karein aur schezwan chicken ko corn fried rice ka saath serve karein.
