Ingredient:
Prepare Dough:
-Sooji (Semolina) ½ Cup
-Doodh (Milk) warm ¾ Cup
-Maida (All-purpose flour) sifted 2 Cups
-Sugar 1 tsp
-Namak (Salt) 1 tsp or to taste
-Dahi (Yogurt) 2 tbs
-Water ½ Cup or as required
-Makhan (Butter) melted 1 tbs
Prepare Butter Filling:
-Makhan (Butter) salted 135g (room temperature)
-Lal mirch (Red chili) crushed 1 tsp
-Lehsan (Garlic) chopped ½ tbs
-Hara dhania (Fresh coriander) roughly chopped 2-3 tbs
-Makhan (Butter)
-Hara dhania (Fresh coriander) chopped
Directions:
Prepare Dough:
-In a bowl add semolina,milk and mix well,cover and let it soak for 20 minutes & set aside.
-In a bowl,add all-purpose flour,sugar,salt,soaked semolina,yogurt & mix well until it crumbles.
-Gradually add water & knead until dough is formed.
-Add melted butter & knead dough again until smooth (2-3 minutes),cover & let it rest for 45 minutes.
Prepare Butter Filling:
-In a bowl,add butter,red chilli crushed,garlic,fresh coriander & mix until well combined & set aside.
-On a clean working surface,sprinkle dry flour and knead dough again until smooth.
-Divide the dough in 4 portions,take one portion,sprinkle dry flour & make a smooth ball.
-Sprinkle dry flour and roll out with the help of rolling pin.
-On rolled dough,add & spread butter filling with the help of spatula.
-Cut dough from the centre,roll out from one edge,twist,press & again make a dough ball and let it rest for few minutes.
-Sprinkle dry flour & roll out with the help of rolling pin.
-Heat griddle & fry paratha from both sides and apply butter in between (makes 4).
-Garnish with butter,fresh coriander & serve with tea,daal,pickle or raita!

-Bowl mein maida,cheeni,namak,soaked sooji aur dahi dal dein aur crumble hunay tak ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein.
-Melted makhan dal dein aur dough ko smooth hunay tak dubara ghond lein (2-3 minutes) aur dhak ker 45 minutes kliya rest dein.

-Clean working surface per maida chirak dein aur dough ko smooth hunay tak dubara ghond lein.
-Dough ko 4 portions mein divide ker lein,ek portion lein aur maida chirak ker smooth ball bana lein.
-Maida chirak dein aur rolling pin ki madad sa bail lein.
-Rolled dough per butter filling dal ker spatula ki madad sa pheela lein
-Dough ko center mein sa cut ker lein aur ek edge ko roll,twist aur press ker ka dough ball bana lein aur few minutes kliya chor dein.
-Maida chirak dein aur rolling pin ki madad sa bail lein.
-Tawa garam karein aur paratha ko dono sides sa fry ker lein aur bech bech mein makhan laga lein (makes 4).
-Makhan aur hara dhania sa garnish ker lein aur chai,daal,achar or raita ka saath serve karein!
