Ingredients:
Puff Pastry:
- Ghee 400 gms
- Pani (Water) 200 ml
- Anda (Egg) 1 (Optional)
- Oil 4 tbs
- Namak (Salt) 1 tsp
- Cheeni (Sugar) Powdered 2 tbs
- Maida (All-purpose flour) 500 gms
- Pani (Water) if required
Mince Filling:
- Oil 2-3 tbs
- Pyaz (Onion) Chopped 1 medium
- Adrak lehsan paste (Ginger garlic paste) 1 tsp
- Lal mirch powder (Red chili powder) ½ tsp
- Haldee powder (Turmeric powder) ¼ tsp
- Namak (Salt) ½ tsp or to taste
- Zeera powder (Cumin powder) ½ tsp
- Beef mince (Beef qeema) 1 Cup (Boiled with ½ tsp ginger garlic paste)
- Matar (Peas) Boiled ½ Cup
- Maida (All-purpose flour) 1 tbs
- Pani (Water) 2 tbs pr as required
- Hari mirch (Green chili) chopped 1-2
- Hara dhania (Coriander) chopped 3-4 tbs
Directions:
Puff Pastry:
In wok,add ghee,let it melt and bring it to room temperature.
In bowl,add chilled water with ice cubes,melted ghee,leave it until ghee becomes solid and refrigerate for approx.6 hours.
In jug,add water,egg,oil,salt,sugar and whisk well.
In bowl,add all-purpose flour and make a well,gradually add egg water mixture and knead until smooth & soft dough is formed.Use water if required,cover and let it rest for 20 minutes.
Take out solid ghee from water and squeeze out excess water completely.
Take square pan,place butter paper and set a block in a square pan.
Place butter paper on top and with the help of kitchen hammer flatten ghee and freeze ghee block for 20 minutes.
Take prepared dough,sprinkle generous amount of flour and roll out dough in round shape with the help of rolling pin.
In the center of the dough,place solid ghee block,wrap four sides,dust dry flour and roll out in rectangular shape with the help of rolling pin,fold one third into the middle and then the other third on top,fold and overlap the remaining sides,cover and freeze it for 20 minutes.
Take out from freezer,dust dry flour and roll out in rectangular shape with rolling pin.
Repeat the same over lapping folding process,cover and freeze it for another 20 minutes.
Again take out from freezer,dust dry flour and roll out in rectangular shape with rolling pin.
Puff pastry is ready and use as required.
Tips:
If you are using butter,follow the same puff pastry method.
If you are using ghee,freeze it for 15-20 minutes and if you are using unipuff,put it in fridge for 15-20 minutes.
Sprinkle generous amount of all-purpose flour while you are rolling or overlapping puff pastry.
In puff pastry recipes,egg is optional.
Put the ghee (with chilled ice cold water) in refrigerator until ghee becomes solid.
Mince Filling:
In fring pan,add oil and onion,fry until translucent.
Add ginger garlic paste,red chili powder,turmeric powder,salt,cumin powder and mix well.
Add beef mince and peas,mix well.
Add all-purpose flour and mix well.
Add water,green chilies,coriander,mix and let the mixture cool down.
Roll out puff pastry,cut in desired shape with cutter,egg wash,add mince filling,put another piece on top and gently press to seal and egg wash again.
Spray baking tray with water and place mince patties,bake in a pre-heated oven at 180 C for 40-45 minutes.
Mince patties are ready.

Karhai mein ghee dal ker melt ker lein aur room temperature per thanda ker lein.
Bowl mein thanda pani baraf ka saath aur melted ghee dal dein aur chor dein jab tak ghee solid form mein ajaye aur 6 hours kliya refrigerate ker lein.
Jug mein pani,anda,oil aur namak dal ker ache tarhan whisk ker lein.
Bowl mein maida dal dein,well bana lein aur thora thora ker ka egg water mixture daltay jayein aur ghond ker medium soft dough tayyar ker lein (agar zaroorat ho tou pani dal ker ghond lein) dhak ker 15-20 minutes kliya rakh dein.
Solid ghee ko pani sa nikal lein aur ache tarhan nichore lein.
Square pan la ker butter paper laga lein aur squeeze solid ghee rakh dein.
Upper sa butter paper laga ker kitchen hammer ki madad sa ghee ko flat ker lein aur 15-20 minute kliya freeze ker lein.
Dough per maida chirak ker rolling pin ki madad sa round shape mein bail lein.
Dough ka bech mein solid ghee block rakh dein aur dough ka corners ko fold ker ka block ko wrap ker lein,maida chirak ker rectangular shape mein rolling pin ki madad sa bail lein,one third side ko middle tak fold ker lein phir dosray third part ko bhi fold ker lein,baqi bache hoye sides ko overlap fold ker lein aur 15-20 minutes kliya freeze ker lein.
Freezer sa nikal ker maida chirak dein aur rectangular shape mein rolling pin ki madad sa bail lein.
Yehe over lapping folding ko dubara karein aur 15-20 minutes kliya freeze ker lein.
Freezer sa nikal ker maida chirak dein aur rectangular shape mein rolling pin ki madad sa bail lein.
Puff pastry tayyar hai,zaroorat ka mutabiq istemal karein.
Mince Filling:
Frying pan mein oil aur pyaz dal ker translucent hunay tak fry ker lein.
Adrak lehsan paste,lal mirch powder,haldee powder,namak aur zeera powder dal ker ache tarhan mix ker lein.
Beef qeema aur matar dal ker mix ker lein.
Maida dal ker ache tarhan mix ker lein.
Pani,hari mirch aur hara dhania dal ker mix karein aur mixture ko thanda ker lein.
Puff pastry ko roll out ker ka cutter ki madad sa cut ker lein,egg wash karein,qeema filling rakh ker upper sa dosra piece rakh dein,halka sa press ker ka seal ker lein aur egg wash karein.
Baking tray ko pani sa spray ker lein,qeema patties rakh ker pre-heated oven mein 180 C per 40-45 minutes kliya bake ker lein.
