Ingredients:
Prepare Tamarind Chutney:
-Water 1 & ½ Cup
-Gur (Jaggery) crushed 1 Cup
-Imli pulp (Tamarind pulp) ⅓ Cup
-Kala namak (Black salt) ½ tsp
-Lal mirch powder (Red chilli powder) ¼ tsp or to taste
-Zeera powder (Cumin powder) ½ tsp
-Kali mirch (Black pepper) crushed ½ tsp
-Adrak powder (Ginger powder) ¼ tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Garam masala powder ¼ tsp
Prepare Potli Samosa:
-Dalda Canola cooking oil 1 tbs
-Adrak lehsan paste (Ginger garlic paste) ½ tsp
-Pyaz (Onion) chopped 1 large
-Boneless chicken small cubes 200g
-Hari mirch (Green chillies) sliced 2
-Kali mirch (Black pepper) crushed ½ tsp
-Lal mirch (Red chilli) crushed ½ tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Kashmiri lal mirch (Kashmiri red chilli) powder ½ tsp
-Chicken powder ¼ tsp
-Roll sheets 6 or as required
-Hara pyaz (Spring onion) leaves
-Cooking oil for frying
Prepare Mix Chana Chaat:
-Safed chanay (White chickpeas) boiled 1 & ½ Cup
-Aloo (Potatoes) boiled & cubes 2 medium
-Pyaz (Onion) sliced 1 medium
-Tamatar (Tomato) chopped 1 small
-Hari mirch (Green chillies) sliced 2
-Lemon juice 1 tbs
-Chaat masala ½ tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Hara dhania (Fresh coriander) chopped handful
-Podina (Mint leaves) chopped handful
Assembling:
-Green chutney
-Dahi (Yogurt) whisked
-Anar (Pomegranate)
Directions:
Prepare Tamarind Chutney:
-In a saucepan,add water,jaggery,tamarind pulp,black salt,red chilli powder,cumin powder,black pepper crushed,ginger powder,pink salt,garam masala powder & mix well,bring it to boil & simmer on medium flame for 4-5 minutes. Tamarind chutney is ready!
Prepare Potli Samosa:
-In frying pan,add cooking oil,ginger garlic paste & mix well.
-Add onion & sauté until translucent.
-Add chicken & mix well until it changes color.
-Add green chillies,black pepper crushed,red chilli crushed,pink salt,cumin seeds,kashmiri red chilli powder,chicken powder,mix well & cook on medium flame for 4-5 minutes.
-Let it cool.
-On a cutting board,place roll sheets,add prepared chicken filling (2 tbs),fold & make a potli shape & tie with spring onion (makes 6).
-In a wok,heat cooking oil & fry prepared potli on low flame until golden & crispy.
Prepare Chana Mix:
-In a bowl,add white chickpeas,potatoes,onion,tomato,green chillies,lemon juice,chaat masala powder,pink salt,fresh coriander,mint leaves & mix well. Mix chana chaat is ready!
Assembling:
-In a serving platter,add prepared tamarind chutney,green chutney,yogurt,chana mix,potli samosa,pour yogurt,tamarind chutney, green chutney,pomegranate & serve!

-Boil aane dein aur medium flame par 4-5 minutes cook kar lein.Tamarind chutney tayyar hai!
Prepare Potli Samosa:
-Frying pan mein cooking oil garam kar ke ginger garlic paste daal kar mix kar lein.
-Phir onion daal kar translucent hone tak sauté kar lein.
-Ab chicken daal kar mix karein jab tak color change ho jaye.
-Phir green chillies,black pepper crushed,red chilli crushed,pink salt,cumin seeds,kashmiri red chilli powder,chicken powder daal kar mix karein aur medium flame par 4-5 minutes cook kar lein.
-Thanda hone dein.
-Cutting board par roll sheet rakhein,2 tbs chicken filling daal kar potli shape mein fold karein aur spring onion se tie karein (6 banenge).
-Wok mein cooking oil garam karein aur low flame par potli ko golden aur crispy hone tak fry kar lein.
Prepare Mix Chana Chaat:
-Ek bowl,white chana,potatoes,onion,tamatar,green chillies,lemon juice,chaat masala powder,pink salt,fresh hara dhania,podina daal kar acha mix kar lein.Chana mix tayyar hai!
Assembling:
-Serving platter mein pehle tamarind chutney,green chutney,yogurt daal lein.
-Upar se chana mix,potli samosa,rakh kar phir se yogurt,tamarind chutney,green chutney,pomegranate daal kar serve karein.
