Ingredients:
- Maida (All-purpose flour) sifted 3 Cups
- Namak (Salt) 1 tbs or to taste
- Kalonji (Nigella seeds) 1 tsp
- Ajwain (Carom seeds) 1 tsp
- Cooking oil 2 tbs
- Water 3/4 Cup or as required
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Garam masala powder ½ tsp
- Namak (Salt) 1 tsp or to taste
- eera powder (Cumin powder) 1 tsp
- Haldee powder (Turmeric powder) ½ tsp
- Chaat masala 1 tsp
- Chicken fillets 250g
- Cooking oil 2 tbs
- Cooking oil 1 tbs
- Zeera (Cumin seeds) 1 tsp
- Ajwain (Carom seeds) ½ tsp
- Adrak (Ginger) chopped ½ tbs
- Sabut dhania (Coriander seeds) crushed ½ tbs
- Aloo (Potatoes) boiled & mashed 4 medium
- Hara dhania (Fresh coriander) chopped 2-3 tbs
- Maida (All-purpose flour) 3 tbs
- Water ½ Cup or as required
- Green chutney as required
- Cooking oil for frying
Directions:
In a bowl,add all-purpose flour,salt,nigella seeds,carom seeds,cooking oil and mix well.
Gradually add water and knead until hard dough is formed,cover & let it rest for 30 minutes.
In a small bowl,add red chilli powder,garam masala powder,salt,cumin powder,turmeric powder,chaat masala,mix well & set aside.
Pat dry chicken fillets with kitchen towel/tissue paper.
Sprinkle prepared spice mix on both sides of the chicken fillets & reserve the remaining spice mix for later use.
In frying pan,add cooking oil,place chicken fillets & cook on medium flame for 2 minutes (each side) then cover & let it cook on low flame for 5 minutes.
Now shred the chicken with the help of forks and shift the chicken on one side of frying pan.
In the same frying pan,add cooking oil,cumin seeds,carom seeds and mix well.
Add ginger & cook for a minute.
Add coriander seeds,boiled & mashed potato,reserved spice mix & mix with the shredded chicken until well combined.
Add fresh coriander,mix well and let it cool.
In a small bowl,add all-purpose flour,water & mix well.Flour slurry is ready!
Knead dough again until smooth & divide into two equal halves.
Take one part,make a ball and roll out the dough with the help of rolling pin into square shape.
Add & spread cooked chicken & potato mixture and green chutney over it.
Roll out dough & cut into pin wheels slices (not more than 1 inch) (makes 24-25).
Option # 1 Deep Fry:
In a wok heat cooking oil & dip pin wheels slices in flour slurry and fry on medium low flame from both sides until golden brown.
Option # 2 Air Fry:
Brush pin wheels slices with oil from both sides and air fry at 180 C for 25 minutes.
Serve with tomato ketchup!

Thora thora ker ka pani shamil karein aur ghond ker hard dough tayyar ker lein aur dhak ker 30 minutes
Chotay bowl mein lal mirch powder,garam masala powder,namak,zeera powder,haldee powder aur chaat masala powder dal ker ache tarhan mix ker lein & side per rakh dein.
Chicken fillets ko kitchen towel/tissue paper sa pat dry ker lein.
Chicken fillets ki dono sides per tayyar spice mix sprinkle karein aur baqi spice mix ko bad mein use kernay kliya side per rakh dein.
Frying pan mein cooking oil dal dein aur chicken fillets ko darmiyani ancch per 2 minutes (each side) kliya paka ker lein phir dhak ker halki ancch per 5 minutes kliya paka lein.
Phir chicken fillets ko fork ki madad sa shred ker lein aur frying pan ki ek side per rakh dein.
Us he frying pan mein cooking oil,zeera aur ajwain dal ker ache tarhan mix ker lein.
Adrak dal dein aur 1 minute kliya paka lein.
Sabut dhania,boiled & mashes aloo,reserved spice mix dal dein aur chicken ka saath ache tarhan mix ker lein.
Hara dhania dal ker ache tarhan mix karein & thanda ker lein.
Chotay bowl mein maida aur pani dal ker mix ker lein.Flour slurry tayyar hai!
Dough ko smooth hunay tak dubara ghond lein aur do equal parts mein divide ker lein.
Ek part lein ker ball bana lein aur rolling pin ki madad sa square shape mein bail lein.
Cooked chicken & aloo mixture aur hari chutney dal ker pheela lein.
Dough ko roll ker lein aur pin wheel slices mein cut ker lein (not more than 1 inch) (makes 24-25).
Option # 1 Deep Fry:
Karhai mein cooking oil garam karein aur pin wheel slices ko flour slurry mein dip karein aur darmiyani halki ancch per dono sides sa golden brown hunay tak fry ker lein.
Option # 2 Air Fry:
Pin wheel slices ki dono sides per olive oil laga lein aur 180 C per 25 minutes kliya air fry ker lein.
Tomato ketchup ka saath serve karein!
