Ingredients:
Prepare Pesto Sauce:
-Kaju (Cashew nuts) 12-15
-Lehsan (Garlic) cloves 2-3
-Fresh basil leaves 20g
-Parmesan cheese powder 2 tbs
-Kali mirch powder (Black pepper powder) ¼ tsp
-Namak (Salt) ¼ tsp or to taste
-Lemon juice ½ tbs
-Olive oil 3 tbs
-Chicken fillet 1
-Makhan (Butter) 1 tsp
Prepare Yogurt Sauce:
-Dahi (Yogurt) hung ½ Cup
Assembling:
-Bran bread slice as required
-Makhan (Butter) as required
-Sundried tomatoes chopped
-Mozzarella cheese slice 1
Directions:
Prepare Pesto Sauce:
-In a grinder,add cashew nuts,garlic & grind well.
-Add fresh basil leaves,parmesan cheese powder,black pepper powder,salt,lemon juice,olive oil & grind to make paste & set aside.
-Cut chicken fillet from center & pound with the help of meat mallet.
-In a bowl,add chicken fillet,prepared pesto sauce & mix well (reserve 2 tbs pesto sauce for later use) & marinate for 15 minutes.
-On a cast iron grill pan,add butter & let it melt.
-Add marinated chicken & grill until done (4-6 minutes each side),let it rest for few minutes then cut into pieces & set aside.
Prepare Yogurt Sauce:
-In a bowl,add yogurt,reserved 2 tbs of pesto sauce,whisk well & set aside.
Assembling:
-On a bran bread slice,spread butter on one slide then flip.
-Add & spread prepared yogurt sauce,place chicken pieces,add sundried tomatoes,mozzarella cheese slice & place another bran bread slice over it & spread butter on top slice.
-Place the sandwich on a panini press grill & grill at 200C for 3-4 minutes or grill in pan until done from both sides.
-Cut & serve with yogurt sauce (makes 2).

-Chicken fillet ko center mein sa cut ker lein aur meat mallet ki madad sa pound ker lein.
-Bowl mein chicken fillet aur tayyar pesto sauce dal ker ache tarhan mix karein lein (reserve 2 tbs pesto sauce for later use) & 15 minutes kliya marinate ker lein.
-Cast iron grill pan mein makhan dal ker melt ker lein.
-Marinated chicken dal dein aur pak janay tak grill ker lein (4-6 minutes each side),few minutes kliya rest dein phir piece mein cut ker lein & side per rakh dein.

-Bowl mein dahi aur reserved 2 tbs of pesto sauce dal ker ache tarhan whisk ker lein & side per rakh dein.
Assembling:
-Bran bread slice per makhan laga ker flip ker lein.
-Tayyar yogurt sauce dal ker pheela lein,chicken pieces,sundried tomatoes aur mozzarella cheese slice dal ker upper sa ek aur bread slice rakh dein aur makhan laga lein.
-Sandwich ko panini press grill mein rakh dein & 200C per 3-4 minutes kliya grill ker lein or pan mein dono sides sa grill ker lein.
-Cut ker lein aur yogurt sauce ka saath serve karein (makes 2).
