Ingredients:
-Water as required
-Jau (Barley) ¾ Cup
-Gandum (Wheat) ¾ Cup
-Chana daal (Split bengal gram) ½ Cup
-Masoor daal (Red lentil) ¼ Cup
-Mash daal (White lentil) ¼ Cup
-Moong daal (Yellow lentil) ¼ Cup
-Chawal (Rice) tota ¼ Cup
-Water or as required
-Water 3 litres or as required
-Cooking oil ½ Cup
-Darchini (Cinnamon sticks) 2
-Sabut kali mirch (Black peppercorns) 12-15
-Tez patta (Bay leaves) 2
-Pyaz (Onion) sliced 2 medium
-Boneless beef large pieces ½ kg
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Hari mirch (Green chilli) paste 1 & ½ tbs
-Lal mirch powder (Red chilli powder) 1 & ½ tbs or to taste
-Namak (Salt) 1 tbs or to taste
-Dhania powder (Coriander powder) ½ tbs
-Haldi powder (Turmeric powder) ½ tbs
-Garam masala powder 1 tsp
-Elaichi powder (Cardamom powder) ½ tsp
-Dahi (Yogurt) whisked 1 Cup
-Water 4 Cups or as required
-Namak (Salt) ½ tbs or to taste
Prepare Tadka:
-Cooking oil 4 tbs
-Pyaz (Onion) sliced 1 small
-Adrak (Ginger) julienne
-Pyaz (Onion) fried
-Podina (Mint leaves) chopped
-Hara dhania (Fresh coriander) chopped
-Chaat masala
-Hari mirch (Green chillies) sliced
Directions:
-In a large bowl,add water,barley,wheat,split bengal garm,red lentil,white lentil,yellow lentil,rice,mix well & wash thoroughly then rinse with water.
-Add water & let them soak overnight & stain.
-In a daig,add soaked lentils & water,mix well & bring it to boil,cover & cook on low flame until tender (approx. 2-3 hours).
-Stir & mash in between,if required,add 1 cup of hot water,if too thick in consistency & mix well.
-In a pot,add cooking oil,cinnamon sticks,black peppercorns,bay leaves & mix well.
-Add onion,mix well & fry until light golden.
-Add beef & mix well until it changes color.
-Add ginger garlic paste,green chilli paste,red chilli powder,salt,coriander powder,turmeric powder, garam masala powder,cardamom powder & mix well.
-Add yogurt,mix well & cook until oil separates (4-5 minutes).
-Add water,mix well & bring it to boil,cover & cook on low flame until tender (approx. 1 hour).
-Remove bay leaves,cinnamon sticks & discard them.
-Now add prepared beef gravy in lentil mixture & mix well.
-Now mash well while cooking with the help of wooden masher until desired consistency (cooking time approx. 1-2 hours).
-Adjust consistency by adding 1 cup hot water.
-Add salt & mix well.
Prepare Tadka:
-In frying pan,add cooking oil,onion & fry until golden.
-Now add prepared tadka in daig & mix well.
-Garnish with tarka oil,ginger,fried onion,mint leaves,fresh coriander,chaat masala,green chillies & serve!

-Hari mirch (Green chillies) sliced
Directions:
-Baday bowl mein pani,jau,gandum,chana daal,masoor daal,mash daal,mong daal aur chawal dal ker ache tarhan mix karein aur pani sa ache tarhan dho lein.
-Pani dal ker overnight kliya bhego dein phir strain ker lein.
-Daig mein soaked daalein aur pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per gul janay tak paka lein (approx. 2-3 hours).
-Bech bech mein stir & mash kertay rahein aur agar zaroorat ho tou 1 cup garam pani dal ker ache tarhan mix ker lein.
-Pot mein cooking oil,darchini,sabut kali mirch aur tez patta dal ker ache tarhan mix karein.
-Pyaz dal dein aur golden ho janay tak fry ker lein.
-Beef dal dein aur rang tabdeel ho janay tak ache tarhan mix karein.
-Adrak lehsan paste,hari mirch paste,lal mirch powder,namak,dhania powder,haldi powder,garam masala powder aur elaichi powder dal ker ache tarhan mix karein.
-Dahi dal ker ache tarhan mix karein aur oil alag ho janay tak paka lein (4-5 minutes).
-Pani dal ker ache tarhan mix karein aur ubal anay ka bad halki ancch per gul janay tak paka lein (approx. 1 hour).
-Tez patta aur darchini ko nikal ker discard ker dein.
-Daal mixture mein tayyar beef gravy dal ker ache tarhan mix ker lein.
-Ab wooden masher ki madad sa desired consistency ajanay tak ache tarhan mash ker lein (cooking time approx. 1-2 hours).
-Agar zaroorat ho tou consistency adjust kernay kliya 1 cup garam pani shamil ker lein.
-Namak dal ker ache tarhan mix ker lein.
Prepare Tadka:
-Frying pan mein cooking oil aur pyaz dal dein aur golden ho janay tak fry ker lein.
-Ab daig mein tadka dal ker ache tarhan mix karein.
-Tadka oil,adrak,fried pyaz,podina,hara dhania,chaat masala aur hari mirchein dal ker serve karein!
