Pav Bhaji

Ingredients:

Pao bhaji Masala:

  • Badiyan ka phool (Star anise) 1
  • Badi elaichi (Black cardamom) 1
  • Laung (Cloves) 8-10
  • Darchini (Cinnamon stick) 1
  • Sabut lal mirch (Button red chilies) 5-6
  • Sabut kali mirch (Black peppercorns) 1 tsp
  • Sabut dhania (Coriander seeds) 2 tbs
  • Zeera (Cumin seeds) 2 tbs
  • Saunf (Fennels seeds) ½ tbs
  • Jaifil (Nutmeg) ½ piece
  • Javatri (Mace) 1 piece
  • Kala namak (Black salt) 2 tsp
  • Haldee powder (Turmeric powder) 1 tsp
  • Aamchor powder (Dried mango powder) 1 & ½ tbs
  • Lehsan (Garlic) 6-7 cloves
  • Adrak (Ginger) 1 inch piece
  • Kashmiri lal mirch (Kashmiri red chilies) soaked 2
  • Pani (Water) 2 tbs or as required
  • Phool gobhi (Cauliflower) chopped ½ Cup
  • Matar (Peas) ½ Cup
  • Shimla mirch (Capsicum) chopped ½ Cup
  • Gajar (Carrots) chopped ½ Cup
  • Tamatar (Tomatoes) chopped 3 medium
  • Pani (Water) 1 & ½ Cups or as required
  • Aloo (Potatoes) boiled & cubes 250 gms
  • Namak (Salt) 1 tsp or to taste
  • Prepared pao bhaji spice mix to taste
  • Makhan (Butter) 2 tbs
  • Cooking oil 1 tbs
  • Makhan (Butter) 3-4 tbs
  • Zeera (Cumin seeds) 1 tsp
  • Pyaz (Onion) chopped 1 medium
  • Prepared pao bhaji spice mix or to taste
  • Kasuri meethi (Dried fenugreek leaves) 1 tsp
  • Lemon juice 1 tbs
  • Makhan (Butter) 1 tbs

Directions:

In frying pan,add star anise,black cardamom,cloves,cinnamon stick,button red chilies,black peppercorns,coriander seeds,cumin seeds,fennel seeds,nutmeg,mace and roast until fragrant & let it cool.

In spice mixer,add roasted spices and grind well.

Add black salt,turmeric powder,dried mango powder,grind until coarse powder.Pao bhaji Spice mix is ready!

In spice mixer,add garlic,ginger,Kashmiri red chilies,water,grind to make a paste & set aside.

In pot,add cauliflower,peas,capsicum,carrot,tomatoes and water,mix well and bring it to boil,cover and cook on medium low flame for 15-20 minutes.

Add potatoes,salt,prepared pao bhaji spice mix,grinded chili paste and mash well with the help of the masher.

Add butter,mash again and cook for 5 minutes and take out in a bowl & set aside.

In the same pot,add cooking oil,butter and let it melt.

Add cumin seeds,onion,mix well and sauté until translucent.

Add remaining grinded chili paste and mix well.

Add prepared pao bhaji spice mix and mix well.

Add cooked & mashed vegetables and mix well.

Add dried fenugreek leaves,lemon juice and mix well.

Add butter,cover and cook on low flame for 2-3 minutes.

Garnish with onion,green chili,butter,lemon slices & serve!
