Ingredients:
Prepare Baisan Mixture:
-Baisan (Gram flour) sifted 1 & ½ Cup
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Zeera (Cumin seeds) ½ tsp
-Himalayan pink salt ½ tsp or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Lal mirch (Red chilli) crushed ½ tsp
-Water ¾ Cup or as required
Prepare Potato Mixture:
-Aloo (Potatoes) boiled 3 medium
-Hari mirch (Green chilli) paste ½ tbs
-Himalayan pink salt ½ tsp or to taste
-Kashmiri lal mirch (Kashmiri red chilli) powder ½ tsp
-Chaat masala 1 tsp
-Hara dhania (Fresh coriander) chopped 2-3 tbs
-Palak (Spinach) leaves as required
-Cooking oil for frying
Assembling:
-Chanay (Chickpeas) boiled as required
-Bareek boondi soaked as required
-Tamatar (Tomato) chopped as required
-Pyaz (Onion) chopped as required
-Dahi (Yogurt) whisked as required
-Khatti meethi chutney as required
-Green chutney as required
-Chaat masala
-Nimco sev
-Hara dhania (Fresh coriander) chopped
Directions:
Prepare Baisan Mixture:
-In a flat dish,add gram flour,cumin seeds,pink salt,turmeric powder,red chilli crushed,gradually add water & whisk until well combined,cover & let it rest for 10 minutes.
Prepare Potato Mixture:
-In a bowl,add potatoes & mash well with the help of masher.
-Add green chilli paste,pink salt,kashmiri red chilli powder,chaat masala,fresh coriander & mix well.
-On a clean spinach leaf,add & spread prepared potato mixture,place another spinach leaf on it & press gently.
-Now coat spinach leaves in prepared baisan mixture from both sides.
-In a wok,heat cooking oil & fry on medium flame until golden & crispy (makes 18-20)
Assembling:
-Assemble fried palak patta on a platter,add chickpeas,bareek boondi,tomato,onion,yogurt,khatti meethi chutney,green chutney,sprinkle chaat masala,nimco sev & fresh coriander & serve!

-Flat dish mein baisan,zeera,pink salt,haldi powder,lal mirch crushed aur thora thora ker ka pani shamil karein aur ache tarhan whisk ker lein,dhak dein aur 10 minutes kliya chor dein.
Prepare Potato Mixture:
-Bowl mein aloo dal ker masher ki madad sa ache tarhan mash ker lein.
-Hari mirch paste,pink salt,Kashmiri lal mirch powder,chaat masala aur hara dhania dal ker ache tarhan mix ker lein.
-Palak patta per tayyar potato mixture dal ker pheela lein,ek aur palak ka patta rakh dein aur gently press ker lein.
-Palak patta ko tayyar baisan mixture mein dono sides sa ache tarhan coat ker lein.
-Karahi mein cooking oil garam karein aur darmiyani ancch per golden & crispy ho janay tak fry ker lein (makes 18-20)
Assembling:
-Palat patta patta ko platter mein arrange ker lein,chanay,bareek boondi,tamatar,pyaz,daho,khatti meethi chutney,green chutney,chaat masala,nimco sev aur hara dhania dal ker serve karein!
