Ingredients:
Prepare Pakora Batter:
-Besan (Gram flour) sifted ½ kg
-Lal mirch powder (Red chilli powder) 1 tbs or to taste
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Namak (Salt) 1 tbs or to taste
-Zarda ka rang (Orange food color) ¼ tsp
-Baking powder 1 & ½ tsp
-Water 2 Cups
-Hari mirch (Green chilli) paste 2 tbs
-Cooking oil 1 tbs
-Hara dhania (Fresh coriander) chopped 1-2 tbs
Aloo ke Pakoray:
-Aloo (Potatoes) julienne 2 Cups
-Cooking oil for frying
Phool gobhi Pakoray:
-Phool gobhi (Cauliflower) small florets 2 Cups
-Cooking oil for frying
Palak Pakoray:
-Palak (Spinach) roughly chopped 2 Cups
-Cooking oil for frying
Lauki ke Pakoray:
-Lauki (Bottle gourd) thin slices 2 Cups
-Cooking oil for frying
Chatpatta Magic Masala:
-Zeera (Cumin seeds) 2 tbs
-Ajwain (Carom seeds) ½ tbs
-Sabut dhania (Coriander seeds) 3 tbs
-Kala zeera (Caraway seeds) 1 tsp
-Tatri (Citric acid) ½ tbs
-Namak (Salt) 2 tsp or to taste
-Kala namak (Black salt) 1 tbs
-Lal mirch powder (Red chilli powder) 2 & ½ tbs or to taste
-Lehsan powder (Garlic powder) 1 & ½ tbs
-Chicken powder 4 tbs
-Pyaz (Onion) fried ¼ Cup
Directions:
Prepare Pakora Batter:
-In a bowl,add gram flour,red chilli powder,cumin seeds,salt,orange food color,baking powder & mix well.
-Gradually add water,green chilli paste & whisk well until smooth batter is formed.
-Add cooking oil & whisk well.
-Add fresh coriander & mix well.
Aloo ke Pakoray:
-In a bowl,add potatoes,prepared pakora batter & mix well.
-In a wok,heat cooking oil & deep fry on medium flame until golden brown & crispy.
Phool gobhi Pakoray:
-In a bowl,add cauliflower florets,prepared pakora better & mix well.
-In a wok,heat cooking oil & deep fry on medium flame until golden brown & crispy.
Palak Pakoray:
-In a bowl,add spinach,prepared pakora batter & mix well.
-In a wok,heat cooking oil & deep fry on medium flame until golden brown & crispy.
Lauki ke Pakoray:
-In a bowl,add bottle gourd,prepared pakora batter & mix well.
-In a wok,heat cooking oil & deep fry on medium flame until golden brown & crispy.
Prepare Chatpatta Magic Masala:
-In a spice mill,add cumin seeds,carom seeds,coriander seeds,caraway seeds,citric acid,salt,black salt,red chilli powder,garlic powder,chicken powder,fried onion & grind to make powder.Chatpatta magic masala is ready!
-Can be stored in an airtight jar up to 1 month (cool & dry place).
-Sprinkle chatpatta magic masala on pakora platter & serve with chutney or tomato ketchup!

-Cooking oil dal ker ache tarhan whisk karein.
-Hara dhania dal ker ache tarhan mix ker lein.

-Karahi mein cooking oil garam karein aur darmiyani ancch per golden brown & crispy ho janay tak deep fry ker lein.
Phool gobhi Pakoray:
-Bowl mein phool gobi aur tayyar pakora batter dal ker ache tarhan mix ker lein.
-Karahi mein cooking oil garam karein aur darmiyani ancch per golden brown & crispy ho janay tak deep fry ker lein.
Palak Pakoray:
-Bowl mein palak aur tayyar pakora batter dal ker ache tarhan mix ker lein.
-Karahi mein cooking oil garam karein aur darmiyani ancch per golden brown & crispy ho janay tak deep fry ker lein.
Lauki ke Pakoray:
-Bowl mein lauki aur tayyar pakora batter dal ker ache tarhan mix ker lein.
-Karahi mein cooking oil garam karein aur darmiyani ancch per golden brown & crispy ho janay tak deep fry ker lein.
Prepare Chatpatta Magic Masala:
-Spice mill mein zeera,ajwain,sabut dhania,kala zeera,tatri,namak,kala namak,lal mirch powder, lehsan powder,chicken powder aur pyaz dal dein aur ache tarhan grind ker ka powder tayyar ker lein.Chatpatta magic masala tayyar hai.
-1 month kliya airtight jar mein dal ker store ker saktay han (cool & dry place).
-Pakora platter per chatpatta magic masala sprinkle ker lein aur chutney or tomato ketchup ka saath serve karein!
