Ingredients:
- Water as required
- Namak (Salt) ½ tsp or to taste
- Gajar (Carrots) cubes ½ Cup
- Phool gobhi (Cauliflower) florets ½ Cup
- Aalo (Potato) cubes ½ Cup
- Matar (Peas) ¼ Cup
- Ghee 2 tbs
- Phaliyan (French beans) ¼ Cup (cut in 1 inch)
- Shimla mirch (Capsicum) cubes ½ Cup
- Ghee 1 tsp
- Badam (Almonds) halves 10-12 (soaked & peeled)
- Kaju (Cashew nuts) halves 10-12
- Kishmish (Raisins) 2 tbs
- Ghee ¼ Cup
- Sabut kali mirch (Black peppercorns) 3-4
- Badiyan ka phool (Star anise) 1
- Darchini (Cinnamon stick) 1
- Laung (Cloves) 2
- Badi elaichi (Black cardamom) 1
- Tez patta (Bay leaf) 1
- Zeera (Cumin seeds) 1 tsp
- Pyaz (Onion) sliced 1 medium
- Boneless Beef/Mutton small cubes 350g
- Adrak lehsan paste (Ginger garlic paste) ½ tbs
- Hari mirch (Green chilli) paste 1 tbs
- Namak (Salt) 1 tsp or to taste
- Sabut dhania (Coriander seeds) crushed 1 & ½ tsp
- Dahi (Yogurt) whisked 4-5 tbs (room temperature)
- Water 5 Cups
- Chawal (Rice) basmati ½ kg (soaked for 30 minutes)
- Javitri powder (Mace powder) ¼ tsp
- Jaifil powder (Nutmeg powder) ¼ tsp
- Lemon juice ½ tbs
- Pyaz (Onion) fried
Directions:
In a pot,add water & bring it to boil.
Add salt,carrots,cauliflower,potatoes,peas,cover & boil on low flame until vegetables are half done (4-5 minutes) then strain & set aside.
In a frying pan,add ghee & let it melt.
Add french beans,capsicum,parboil vegetables and fry on medium flame for 2-3 minutes & set aside.
On the same frying pan,add ghee & let it melt.
Add almonds,cashew nuts,raisins & fry on medium flame until golden (approx. 1-2 minutes) & set aside.
In a pot,add ghee & let it melt.
Add star anise,black peppercorns,cinnamon stick,cloves,black cardamom,bay leaf,cumin seeds & mix well.
Add onion & fry until light golden.
Add beef and mix well until it changes color.
Add ginger garlic paste,green chilli paste,salt,coriander seeds,mix well & cook for 2 minutes.
Turn off the flame,add yogurt then turn on the flame,mix well and cook until oil separates (6-8 minutes).
Add water & bring it to boil,cover & cook on medium flame until meat is tender (35-40 minutes) & (reduce to 1 & ½ cup water).
Add rice & mix well.
Add mace powder,nutmeg powder,lemon juice,mix well & bring it to boil.
Add stir fried vegetables,fried nuts,cover with kitchen towel and lid & steam cook on low flame for 12-15 minutes.
Garnish with fried onion,fried nuts & serve!

Namak,gajar,phool ghobi,aalo aur matar dal ker dhak dein aur halki ancch per sabziyan half done hunay tak boil ker lein (4-5 minutes) phir strain ker ka side per rakh dein.
Frying pan mein ghee dal ker melt ker lein.
Phaliyan,shimla mirch aur parboiled vegetables dal dein aur darmiyani ancch per 2-3 minutes kliya fry ker lein & side per rakh dein.
Us he frying pan mein ghee dal ker melt ker lein.
Badam,kaju aur kishmish dal dein aur darmiyani ancch per golden ho janay tak fry ker lein (approx. 1-2 minutes) & side per rakh dein.
Pot mein ghee dal ker melt ker lein.
Badiyan ka phool,sabut kali mirch,darchini,laung,badi elaichi,tez patta aur zeera dal ker ache tarhan mix karein.
Pyaz dal dein aur light golden ho janay tak fry ker lein.
Beef dal dein aur rang tabdeel ho janay tak ache tarhan mix ker lein.
Adrak lehsan paste,hari mirch paste,namak aur sabut dhania dal ker ache tarhan mix karein aur 2 minute kliya paka lein.
Chulha bund ker dein aur dahi dal dein,chulha on karein,ache tarhan mix karein aur oil alag ho janay tak paka lein (6-8 minutes).
Pani dal dein aur ubal anay dein,dhak dein aur darmiyani ancch per gosht gul janay tak paka lein (35-40 minutes) (reduce to 1 & ½ cup water).
Chawal dal ker mix ker lein.
Javitri powder,jaifil powder aur lemon juice dal ker ache tarhan mix karein aur ubal anay dein.
Stir fried vegetables aur fried nuts dal dein,kitchen towel aur lid sa cover ker lein aur halki ancch per 12-15 minutes kliya steam cook ker lein.
Fried pyaz aur fried nuts sa garish ker ka serve karein.
