Ingredients:
Prepare Base Dough:
- Icing sugar 1 Cup
- Ghee 1 Cup
- Maida (All-purpose flour) 1 Cup
- Baisan (Gram flour) ¼ Cup
- Baking powder 2 tsp
- Sooji (Semolina) 2 tbs
- Elaichi powder (Cardamom powder) 1 tsp
Pistachio Flavor:
- Pista (Pistachio) 10-15
- Green food color 1-2 drops
- Ande ki zardi (Egg yolk) whisked as required
- Pista (Pistachio)
Almond Flavor:
- Badam (Almonds) roasted 8-10
- Ande ki zardi (Egg yolk) whisked as required
- Badam (Almonds) roasted
Coffee Flavor:
- Instant coffee 1 & ½ tsp or to taste
- Ande ki zardi (Egg yolk) whisked as required
- Instant coffee
- Cheeni (Sugar)
Ginger Flavor:
- Adrak (Ginger) 1 inch piece
- Ande ki zardi (Egg yolk) whisked as required
- Adrak (Ginger)
- Cheeni (Sugar)
Directions:
For Base Dough:
In bowl,add icing sugar and ghee,whisk well until fluffy & set aside.
In bowl,place sifter,add all-purpose flour,gram flour,baking powder,semolina and sift together.
Add cardamom powder and mix well.
Now add ghee+sugar mixture,mix well and knead until soft dough is formed.
Pistachio Flavor:
In dough,add pistachio and green food color,mix well and cover & refrigerate it for 15 minutes.
Take a mixture and makes 10-12 small balls.
On baking plate/tray,place butter paper and nan khatai balls,egg yolk wash and add pistachios on top.
In pot,add 1 pack of salt,place wire rack (2-3 inches high),cover and preheat on high flame for 15 minutes.
Place baking plate/tray,cover and bake on medium low flame for 15-20 minutes.
You can also bake in preheated oven at 180 C for 15-20 minutes.
Almond Flavor:
In dough,add almonds and mix well,cover and refrigerate it for 15 minutes.
Take a mixture and makes 10-12 small balls.
On baking plate/tray,place butter paper and nan khatai balls,egg yolk wash and place roasted almond on top.
In pot,add 1 pack of salt,place wire rack (2-3 inches high),cover and preheat on high flame for 15 minutes.
Place baking plate/tray,cover and bake on medium low flame for 15-20 minutes.
You can also bake in preheated oven at 180 C for 15-20 minutes.
Coffee Flavor:
In dough bowl,place sifter,add instant coffee and sift it,mix well and cover & refrigerate it for 15 minutes.
Take a mixture and makes 10-12 small balls.
On baking plate/tray,place butter paper and nan khatai balls,egg yolk wash and add instant coffee & sugar on top.
In pot,add 1 pack of salt,place wire rack (2-3 inches high),cover and preheat on high flame for 15 minutes.

In dough,add grated ginger and mix well,cover & refrigerate it for 15 minutes.

Tips:
If the mixture become runny,you can add more all-purpose flour or you can freeze the mixture.
