Wash and clean trotters.
Take a large pot, heat ghee and add onion (grinded), fry until light brown.
Add ginger paste, garlic paste and sauté for 2-3 minutes.
Add trotters and give it a good mix and fry for 1-2 minutes.
Add red chili powder, salt and turmeric powder and sauté for 5 minutes.
Add yogurt and mix well until oil separates.
Now add 6-7 cups of water and cook on low flame until done around 3-4 hour.
Add whole spice powder and put it on simmer for 10 minutes or until desired consistency.
Mutton paye is ready, garnish with fresh coriander, green chilies and ginger.
Paye achi tarhan saaf ker k dho lein.
Ek bada patila mein ghee garam karein aur pyaz (grinded) dal ker halki sunhairi fry ker lein.
Adrak paste, lehsan paste dal ker 2-3 minutes kliya saute karein.
Mutton Paye shamil karein aur ache tarhan mix ker k 1-2 minutes kliya fry ker lein.
Lal mirch,namak aur haldee powder dal ker 5 minute kliya saute ker lein.
Dahi shamil karein aur oil alag hunay tak chamcha chalay rahein.
Ab 6-7 cups pani shamil karein aur halki ancch per 3-4 ghante tak pakne dain.
Garam masala powder dal ker 10 minutes kliya dum per rakh dein.
Mutton paye tayyar hain,hara dhania,hari mirch aur adrak dal ker garmish karein.
