Ingredients:
- Cooking oil ½ Cup
- Pyaz (Onion) sliced 2 large
- Badam (Almonds) 10-11
- Sabut kali mirch (Black peppercorns) ½ tsp
- Darchini (Cinnamon sticks) 2
- Badiyan ka phool (Star anise) 1
- Laung (Cloves) 5-6
- Badi elaichi (Black cardamom) 1
- Hari elaichi (Green cardamom) 5-6
- Tez paat (Bay leaves) 2
- Mutton mix boti ½ kg
- Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
- Lal mirch powder (Red chili powder) 1 tbs or to taste
- Dhania powder (Coriander powder) 1 & ½ tbs
- Haldee powder (Turmeric powder) ½ tsp
- Namak (Salt) 2 tsp or to taste
- Dahi (Yogurt) whisked ¾ Cup (room temperature)
- Pani (Water) 1 Cup or as required
- Garam masala powder 1 tsp
- Elaichi powder (Cardamom powder) ¼ tsp
- Jaifil powder (Nutmeg powder) ½ tsp
- Javatri powder (Mace powder) ½ tsp
- Adrak (Ginger) julienne 1 inch piece
- Dahi (Yogurt) whisked ¼ Cup (room temperature)
- Kewra water 2 tbs
- Zarda ka rang (Yellow food color) ¼ tsp or as required
- Chawal (Rice) ½ kg (boiled with salt until 3/4th done)
- Podina (Mint leaves) handful
Directions:
In wok,add cooking oil,onion and fry until golden brown & take out in a bowl.
In spice mixer,add almonds and blend well.
Add half quantity of fried onions and blend again,set aside and save remaining quantity of fried onion for later use.
In the same wok,add black peppercorns,cinnamon sticks,star anise,cloves,black cardamom,green cardamom,bay leaves & mix.
Add mutton mix boti and mix well until changes color.
Add ginger garlic paste,mix well and cook for 10 minutes.
Add red chili powder,coriander powder,turmeric powder,salt and mix well for 2 minutes.
Add yogurt and mix well.
Add water,mix well and bring it to boil.
Cover and cook on low flame until meat is tender (approx. 30-40 minutes).
Now add blend almond & onion mixture and mix well.
Add garam masala powder,cardamom powder,nutmeg powder,mace powder,mix well and cook until oil separates.
Add ginger,mix & set aside.
In yogurt,add kewra water,yellow food color,mix well & set aside.
In pot,add a layer of boiled rice,cooked qorma,fried onion,mint leaves,half quantity of prepared yogurt mixture,boiled rice,cooked qorma,fried onion,mint leaves,remaining prepared yogurt mixture and boiled rice,cover and steam cook on low flame for 8-10 minutes

Directions:
Karhai mein cooking oil aur pyaz dal dein aur golden brown hunay tak fry ker lein & bowl mein nikal lein.
Spice mixer mein badam dal ker ache tarhan blend ker lein.
Fried pyaz ki half quantity dal ker dubara blend ker dein aur side per rakh dein aur fried pyaz ki baqi bachi hoye quantity ko bad mein use kernay kliya rakh dein.
Us he karhai mein sabut kali mirch,darchini,badiyan ka phool,laung,badi elaichi,hari elaichi aur tez paat dal ker mix ker lein.
Mutton mix boti shamil karein aur rang tabdeel hunay tak ache tarhan mix ker lein.
Adark lehsan paste dal ker ache tarhan mix karein aur 10 minutes kliya paka lein.
Lal mirch powder,dhania powder,haldee powder aur namak dal ker 2 minutes kliya ache tarhan mix ker lein.
Dahi dal ker ache tarhan mix karein.
Pani dal ker ache tarhan mix karein aur ubal anay dein.
Dhak dein aur halki ancch per gosht ko gul janay tak paka lein (approx. 30-40 minutes).
Ab blend badam & pyaz mixture dal ker ache tarhan mix ker lein.
Garam masala powder,elaichi powder,jaifil powder aur javatri powder dal ker ache tarhan mix karein aur oil alag hunay tak paka lein.
Adrak dal ker mix karein & side per rakh dein.
Dahi mein kewra water aur zarda ka rang dal ker ache tarhan mix karein & side per rakh dein.
Pot mein boiled chawal,cooked qorma,fried pyaz,podina aur tayyar dahi ki half quantity dal dein phir boiled chawal,cooked qorma,fried pyaz,podina aur baqi bachi hoye tayyar dahi mixture dal ker boiled chawal dal dein aur dhak ker 8-10 minutes kliya halki ancch per steam cook ker lein.
