Ingredients:
- Mutton mix boti 1 kg
- Lemon juice 1 tbs
- Kacha papita (Raw Papaya) paste 1 & ½ tbs
- Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
- Haldi powder (Turmeric powder) ½ tsp
- Namak (Salt) 1 tsp or to taste
- Cooking oil ¼ Cup
- Pyaz (Onion) sliced 1 large
- Darchini (Cinnamon stick) 1
- Tez pata (Bay leaves) 2
- Laung (Clove) 3
- Bari elaichi (Black cardamom) 1
- Zeera (Cumin seeds) ½ tbs
- Hari mirch (Green chilli) crushed 2 tbs
- Tomato paste 2-3 tbs
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Dhania powder (Coriander powder) 1 tbs
- Kali mirch powder (Black pepper powder) 1 tsp
- Coconut milk powder 2 tbs
- Dahi (Yogurt) whisked 1 Cup
- Water 1 Cup or as required
- Zeera (Cumin seeds) roasted & crushed 1 tsp
- Garam masala powder ½ tsp
- Hara dhania (Fresh coriander) chopped
Directions:
In a bowl,add mutton mix boti,lemon juice,raw papaya paste,ginger garlic paste,turmeric powder,salt & mix well and marinate for 30 minutes.
In a wok,add cooking oil,onion and sauté until translucent.
Add cinnamon stick,bay leaf,cloves,black cardamom,cumin seeds,mix well and fry until light golden.
Add green chilli and mix well.
Add tomato paste & mix well.
Now add marinated mutton,mix well and cook for 4-5 minutes.
Add red chilli powder,coriander powder,black pepper powder,coconut milk powder & mix well.
Add yogurt and mix well.
Add water,cumin seeds,garam masala powder and mix well.
Cover & cook on low flame for 45-50 minutes or until meat is tender.
Garnish with fresh coriander and serve!

Karhai mein cookinh oil aur pyaz dal dein aur translucent hunay tak saute ker lein.
Darchini,tez paat,laung,badi elaichi aur zeera dal ker ache tarhan mix karein aur light golden hunay tak fry ker lein.
Hari mirch dal ker ache tarhan mix karein.
Tomato paste dal ker ache tarhan mix ker lein.
Ab marinated mutton dal ker ache tarhan mix karein aur 4-5 minutes kliya paka lein.
Lal mirch powder,dhania powder,kali mirch powder aur coconut milk powder dal ker ache tarhan mix ker lein.
Dahi shamil karein aur ache tarhan mix ker lein.
Pani,zeera aur garam masala powder dal ker ache tarhan mix ker lein.
Dhak dein aur halki ancch per 45-50 minutes ya gosht gul janay tak paka lein.
