Ingredients:
Prepare Masala Bhari Mirch:
-Zeera (Cumin seeds) roasted & crushed 2 tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Amchor powder (Dried mango powder) 1 tbs
-Namak (Salt) 1 tsp or to taste
-Sabut dhania (Coriander seeds) roasted & crushed 2 tbs
-Lehsan paste (Garlic paste) 2 tbs
-Lemon juice 2 tbs
-Hari mirch (Green chillies) whole 250g
-Cooking oil 2 tbs
Prepare Muthi Dum Kabab:
-Boneless chicken cubes 750g
-Pyaz (Onion) 1 medium
-Hari mirch (Green chillies) whole 4-5
-Hara dhania (Fresh coriander) handful
-Baisan (Gram flour) roasted 2 tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Namak (Salt) 1 tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tbs
-Lal mirch (Red chilli) crushed 1 tsp
-Lemon juice 1 tbs
-Cooking oil ½ Cup
-Cooking oil 1-2 tbs
-Pyaz (Onion) chopped 1 medium
-Tamatar (Tomatoes) chopped 3 large
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Namak (Salt) 1 tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Sabut dhania (Coriander seeds) roasted & crushed 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Meethi (Fenugreek leaves) chopped 3 tbs
-Water ¼ Cup or as required
-Hari mirch (Green chilli) sliced 2-3

Directions:
Prepare Masala Bhari Mirch:
-In a bowl,add cumin seeds,red chilli powder,dried mango powder,salt,coriander seeds,garlic paste, lemon juice & mix well.
-Slit green chillies from the center with the help of knife and deseed them.
-Now stuffed green chillies with prepared spice mix.
-In a frying pan,add cooking oil & fry stuffed chillies on medium flame from all sides until golden brown.
Prepare Muthi Dum Kabab:
-In a chopper,add chicken,onion,green chillies,fresh coriander,gram flour,Kashmiri red chilli powder, coriander seeds,salt,cumin seeds,red chilli crushed & lemon juice,chop until well combined & refrigerate for 30 minutes.
-Grease hands with oil,take small quantity of mixture & make kababs by pressing in fist (makes 23-25).
-In a wok,heat cooking oil & fry kababs on medium flame from both sides until light golden (turn sides in between),take out kababs & set aside.
-Now take out excess oil from wok (reserve it for later use) & left only 1-2 tbs of cooking oil in a wok.
-Add onion & fry until light golden.
-Add tomatoes,mix well & cook until tomatoes are soft (2-3 minutes).
-Let it cool.
-In blender jug,add cooked tomatoes & onion mixture,blend well & set aside.
-In a frying pan,add reserved cooking oil,ginger garlic paste,blended paste,mix well & cook for 2 minutes.
-Add salt,cumin seeds,red chilli crushed,coriander seeds,turmeric powder,mix well & cook for 2-3 minutes.
-Add fenugreek leaves,mix well & cook until oil separates.
-Add water & mix well.
-Add fried muthi kababs,cover & cook on low flame for 6-8 minutes then turn sides gently.
-Add green chillies,cover & simmer on low flame until oil separates (3-4 minutes).
-Garnish with green chilli.
-Serve muthi dum kabab with masala bhari mirchen,rice & salad.

Directions:
Prepare Masala Bhari Mirch:
-Bowl mein zeera,lal mirch powder,amchor powder,namak,sabut dhania,lehsan paste aur lemon juice dal ker ache tarhan mix ker lein.
-Hari mirch ko knife ki madad sa slit laga lein aur deseed ker dein.
-Ab hari mirch mein tayyar spice mix bhar dein.
-Frying pan mein cooking oil dal dein aur stuffed chillies ko darmiyani ancch per tamam sides sa golden brown ho jay tak fry ker lein.
Prepare Muthi Dum Kabab:
-Chopper meun chicken,pyaz,hari mirchein,hara dhania,baisan,kashmiri lal mirch powder,sabut dhania,namak,zeera,lal mirch crushed aur lemon juice dal ker ache tarhan chop ker lein aur 30 minutes kliya marinate ker lein.
-Haath ko oil sa grease karein,mixture ki small quantity lein aur muthi ko press ker ka kababs tayyar ker lein (makes 23-25).
-Karahi mein cooking oil garam karein aur kababs ko darmiynai ancch per dono sides sa light golden ho janay tak fry ker lein (bech mein sides ko turn ker lein) aur kababs ko nikal ker side per rakh dein.
-Karahi mein sa excess oil nikal lein aur bad mein use kernay kliya side per rakh dein aur karahi mein 1-2 tbs oil rehnay dein.
-Pyaz dal ker light golden ho janay tak fry ker lein.
-Tamatar dal ker ache tarhan mix karein aur tamatar naram ho janay tak paka lein (2-3 minutes).
-Thanda ker lein.
-Blender jug mein cooked tamatar & pyaz mixture dal ker ache tarhan blend ker lein & side per rakh dein.
-Frying pan mein reserved cooking oil,adrak lehsan paste aur blended paste dal ker ache tarhan mix karein aur 2 minute kliya paka lein.
-Namak,zeera,lal mirch crushed,sabut dhania & haldi powder dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Meethi dal ker ache tarhan mix karein aur oil alag ho janay tak paka lein.
-Pani dal ker ache tarhan mix karein.
-Fried muthi kababs dal ker dhak dein aur halki ancch per 6-8 minutes kliya paka lein phir sides ko gently turn ker lein.
-Hari mirchein dal ker dhak dein aur halki ancch per oil alag ho janay tak dum per rakh dein (3-4 minutes).
-Hari mirch sa garnish ker lein.
-Muthi dum kabab ko masala bhari mirchein,chawal & salad ka saath serve karein!
