Ingredients:
Prepare Chicken Patty:
-Chicken boneless cubes ½ kg
-Fresh parsley 3-4 tbs
-Pyaz (Onion) 1 small
-Breadcrumbs 2-3 tbs
-Haldi powder (Turmeric powder) ½ tsp
-Paprika powder 1 & ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Dhania powder (Coriander powder) 1 tsp
-Darchini powder (Cinnamon powder) ½ tsp
-Adrak powder (Ginger powder) ½ tsp
-Allspice powder ½ tsp
-Namak (Salt) 1 tsp or to taste
-Cooking oil for frying
Prepare Tahini Yogurt Sauce:
-Dahi (Yogurt) hung 250g
-Tahini sauce 4 tbs
-Honey 1 tbs
-Lemon juice 1 tbs
-Namak (Salt) 1 pinch or to taste
-Paprika powder ¼ tsp
Prepare Moroccan Batbout (Pita Bread):
-Khameer (Instant yeast) 2 & ½ tsp
-Bareek cheeni (Caster sugar) 1 tbs
-Lukewarm water ½ Cup
-Maida (All-purpose flour) sifted 2 Cups
-Sooji (Semolina) ½ Cup
-Namak (Salt) ½ tsp or to taste
-Olive oil 2 tbs
-Water ¼ Cup or as required
Assembling:
-Salad patta (Lettuce leaf)
-Pyaz (Onion) sliced
-Tamatar (Tomato) sliced
Directions:
Prepare Chicken Patty:
-In a chopper,add chicken,fresh parsley,onion,breadcrumbs,turmeric powder,paprika powder,cumin powder,coriander powder,cinnamon powder,ginger powder,g,allspice powder,salt & chop until well combined.
-Grease hands with cooking oil,take a small quantity of mixture (60g) & make patty of equal sizes (makes 10-11).
-In a frying pan,heat cooking oil & fry on medium flame from both sides until golden.
Prepare Tahini Yogurt Sauce:
-In a bowl,add yogurt,tahini sauce,honey,lemon juice,salt,paprika powder,whisk well & set aside.
Prepare Moroccan Batbout (Pita Bread):
-In a small jug,add instant yeast,caster sugar,lukewarm water & mix well,cover & let it rest for 5 minutes.
-In a bowl,add all-purpose flour,semolina,salt & mix well.
-Add olive oil,yeast mixture & mix well.
-Gradually add water & knead until dough is formed.
-Grease the dough with olive oil,cover & let it proof for 1 hour (warm place).
-Place the dough on a clean working surface,sprinkle dry flour & roll out with the help of rolling pin.
-Cut into round circle with the help of the cutter (4-inch) (makes 10-11).
-On heated griddle,place mini pita & cook on low flame until bubbles start appearing then turn the side & cook other side until light brown (2 minutes each side).
Assembling:
-Cut mini pita from the center & make a pocket with the help of knife.
-Add prepared tahini yogurt sauce,lettuce leaf,onion,chicken patty,tomato,prepared tahini yogurt sauce & serve!

-Haathon ko oil sa grease karein aur mixture ki small quantity (60g) la ker ek jaisay sizes ka patties tayyar ker lein (makes 10-11).
-Frying pan mein cooking oil garam karein aur darmiyani ancch per dono sides sa golden ho janay tak fry ker lein.
Prepare Tahini Yogurt Sauce:
-Bowl mein dahi,tahini paste,honey,lemon juice,namak aur paprika powder dal ker ache tarhan whisk ker lein & side per rakh dein.
Prepare Moroccan Batbout (Pita Bread):
-Chotay jug mein khameer,bareek cheeni aur neem garam pani dal ker ache tarhan mix karein aur dhak ker 5 minute kliya chore dein.
-Bowl mein maida,sooji aur namak dal ker ache tarhan mix ker lein.
-Olive oil aur khameer mixture dal ker ache tarhan mix karein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein.
-Dough ko olive oil se grease karein aur dhak ker 1 hour garam jagha proof hunay kliya rakh dein.
-Dough ko clean working surface per rakh dein,maida chirak dein aur rolling pin ki madad sa bail lein.
-Cutter (4-inch) ki madad sa round circle mein cut ker lein (makes 10-11).
-Garam tawa per mini pita rakh dein aur halki ancch per bubbles anay tak paka lein phir side ko turn karein aur dosri side ko light brown ho janay tak paka lein (2 minutes each side).
Assembling:
-Mini pita ko knife ki madad sa cut karein aur pocket bana lein.
-Tayyar tahini yogurt sauce,salad patta,pyaz,chicken patty,tamatar aur tayyar tahini yogurt sauce dal ker serve karein!
