Ingredients:
-Ghee (Clarified butter) 1 tsp
-Shimla mirch (Capsicum) cubes 1 Cup
-Ghee (Clarified butter) 1 tbs
-Phool gobhi (Cauliflower) florets 2 Cups
-Aloo (Potatoes) cubes 2 medium
-Matar (Peas) 1 Cup
-Gajar (Carrot) diced 1 Cup
-Ghee (Clarified Butter) 3-4 tbs
-Darchini (Cinnamon sticks) 2
-Badiyan ka phool (Star anise) 2
-Laung (Cloves) 2-3
-Badi elaichi (Black cardamom) 1
-Sabut kali mirch (Black peppercorns) 8-10
-Zeera (Cumin seeds) 1 tsp
-Pyaz (Onion) sliced 2 medium
-Tamatar (Tomato) chopped 2 medium
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Hari mirch (Green chilli) paste 2 tbs
-Namak (Salt) ½ tbs or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Garam masala powder ½ tsp
-Haldi powder (Turmeric powder) ½ tsp
-Zeera powder (Cumin powder) ½ tsp
-Water 4 Cups or as required
-Chawal (Rice) Basmati/Sella ½ kg (soaked for 30 minutes)
-Lemon juice 1 tbs
-Hari mirch (Green chilli) 2-3
-Hara dhania (Fresh coriander)
Directions:
-In a wok,add clarified butter,capsicum & stir fry on high flame for 1-2 minutes & set aside.
-In the same wok,add clarified butter,cauliflower,potatoes,green peas,carrots,mix well & stir fry on medium flame for 3-4 minutes & set aside.
-In a pot,add clarified butter & let it melt.
-Add cinnamon sticks,star anise,cloves,black cardamom,black peppercorns,cumin seeds & mix well.
-Add onion,mix well & fry until light golden.
-Add tomatoes & mix well.
-Add ginger garlic paste,green chilli paste,mix well & cook for 2-3 minutes.
-Add salt,red chilli powder,garam masala powder,turmeric powder,cumin powder,mix well & cook for a minute.
-Now add stir fried vegetables,mix well & cook for 2-3 minutes.
-Add water,mix well & bring it to boil,cover & cook on medium flame for 8-10 minutes.
-Add rice & mix well.
-Add stir fried capsicum,lemon juice,green chillies & mix gently,cover & steam cook on low flame for 12-15 minutes.
-Garnish with fresh coriander & serve!

-Karahi mein ghee aur shimla mirch dal dein aur tez ancch per 1-2 minutes kliya stir fry ker lein & side per rakhd ein.
-Us he karahi mein ghee,phool gobhi,aloo,matar aur gajar dal ker ache tarhan mix karein aur darmiyani ancch per 3-4 minutes kliya stir fry ker lein & side per rakh dein.
-Pot mein ghee dal ker melt ker lein.
-Darchini,badiyan ka phool,laung,badi elaichi,sabut kali mirch aur zeera dal ker ache tarhan mix karein.
-Pyaz dal dein aur light golden ho janay tak fry ker lein.
-Tamatar dal ker ache tarhan mix karein.
-Adrak lehsan paste aur hari mirch paste dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Namak,lal mirch powder,garam masala powder,haldi powder aur zeera powder dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Ab stir fried vegetables dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur darmiyani ancch per 8-10 minutes kliya paka lein.
-Chawal dal ker ache tarhan mix karein.
-Stir fried vegetables,lemon juice aur hari mirchein dal ker gently mix karein aur dhak ker halki ancch per 12-15 minutes kliya steam cook ker lein.
-Hara dhania sa garnish ker ka serve karein!
