In boiling water,blanch carrots for 3 minutes and blanch cauliflower for 1-2 minute, strain and dry all vegetables.
In jar,add carrots,cauliflower,green chilies,green garlic,salt,turmeric powder,mustard seeds crushed,red chili crushed and vinegar and mix well.
Cover with lid and let it sit for 24 hours (Preferably in sunlight).
Add water (boiled), cover and leave it for 3 days (shake well occasionally).
Mix vegetable pickle is ready to use.
Ubaltay pani mein gajar ko 3 minute aur phool gobhi ko 1-2 minute kliya blanch ker lein,strain ker ka tamam sabzio ko dry ker lein.
Jar mein gajar,phool gobhi,hari mirchein,namak,haldee powder,rai dana,lal mirch crushed aur sirka dal ker ache tarhan mix ker lein.
Lid laga ker 24 hours kliya rakh dein (Tarjeehan suraj ki roshni mein).
Boil pani shamil karein,dhak ker 3 din kliya chor dein (shake well occasionally).
Mix sabzio ka achar istamal kerna kliya tayyar hai.
