Ingredients:
Prepare Matar Kabab:
-Matar (Peas) boiled 2 Cups
-Pyaz (Onion) fried 2 tbs
-Aloo (Potatoes) boiled 4 medium
-Hara pyaz (Spring onion) chopped 1 Cup
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Lal mirch (Red chilli) crushed 1 tsp
-Haldi powder (Turmeric powder) 1 tsp
-Zeera powder (Cumin powder) 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Namak (Salt) 1 tsp or to taste
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Lemon juice 1 tbs
-Maida (All-purpose flour) 2-3 tbs
-Cooking oil 2 tbs
Prepare Mirchi Pulao:
-Sabut dhania (Coriander seeds) crushed 1 & ½ tbs
-Saunf (Fennel seeds) crushed 1 & ½ tbs
-Chaat masala 1 tbs
-Lemon juice 2-3 tbs
-Hari mirch (Green chillies) deseeded 8-9
-Cooking oil 2 tbs
-Cooking oil 4-5 tbs
-Darchini (Cinnamon stick) 2
-Sabut kali mirch (Black peppercorns) 12-14
-Badi elaichi (Black cardamom) 2
-Badiyan ka phool (Star anise) 2
-Zeera (Cumin seeds) 1 tsp
-Pyaz (Onion) sliced 1 medium
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Hari mirch (Green chilli) paste 1 tbs
-Dahi (Yogurt) whisked 4 tbs
-Chawal (Rice) Basmati 500g (soaked for 30 minutes)
-Hot water 4 Cups
-Namak (Salt) 1 or to taste
-Chicken powder 1 tbs substitute: 1-2 chicken cubes
-Lemon juice 2 tbs
-Hara dhania (Fresh coriander) chopped
-Pyaz (Onion) fried
Directions:
Prepare Matar Kabab:
-In a chopper,add boiled peas,fried onion,chop well & set aside.
-In a bowl,add boiled potatoes & mash well with the help of masher.
-Add chopped peas mixture,spring onion,coriander seeds,red chilli crushed,turmeric powder,cumin powder,red chilli powder,salt,ginger garlic paste,lemon juice,all-purpose flour & mix until well combined.
-Grease hands with oil,take small quantity of mixture (60g) & make kababs of equal sizes.
-In a frying pan,heat cooking oil & shallow fry kababs on medium flame from both sides until golden brown (makes 15).
Prepare Mirchi Pulao:
-In a small bowl,add coriander seeds,fennel seeds,chaat masala,lemon juice & mix well.
-Stuffed green chillies with prepared spice mix & set aside.
-In a pot,add cooking oil,stuffed green chillies & fry on medium flame until light golden & set aside.
-In the same pot,add cooking oil,cinnamon stick,black peppercorns,black cardamoms,star anise, cumin seeds & mix well.
-Add onion & fry until light golden.
-Add ginger garlic paste,green chilli paste & mix well.
-Add yogurt,mix well & cook for 1-2 minutes.
-Add soaked rice & mix well.
-Add hot water & mix well.
-Add salt,chicken powder,lemon juice,mix well & cook on medium flame until water is reduced (2-3 minutes).
-Add fresh coriander,cover with kitchen cloth & lid and steam cook on low flame for 10-12 minutes.
-Garnish masala bhari mirch,fried onion & serve with matar kabab!

-Bowl mein boiled aloo dal ker masher ki madad sa ache tarhan mash ker lein.
-Chopped matar mixture,hara pyaz,sabut dhania,lal mirch crushed,haldi powder,zeera,lal mirch powder,namak,adrak lehsan paste,lemon juice aur maida dal ker ache tarhan mix ker lein.
-Haathon ko oil sa grease karein,mixture ki small quantity (60g) lein aur ek jaisay sizes ka kabab tayyar ker lein.
-Frying pan mein cooking oil garam karein aur darmiyani ancch pet dono sides sa golden brown ho janay tak shallow fry ker lein (makes 15).

-Chotay bowl mein sabut dhania,saunf,chaat masala aur lemon juice dal ker ache tarhan mix ker lein.
-Green chillies mein tayyar spice mix bhar dein & side per rakh dein.
-Pot mein cooking oil aur stuffed green chillies dal dein aur darmiyani ancch per light golden ho janay tak fry ker lein & side per rakh dein.
-Us he pot mein cooking oil,darchini,sabut kali mircj,badi elaichi,badiyan ka phool aur zeera dal ker ache tarhan mix ker lein.
-Pyaz dal dein aur light golden ho janay tak fry ker lein.
-Adrak lehsan paste aur hari mirch paste dal ker ache tarhan mix ker lein.
-Dahi dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Soaked chawal dal ker ache tarhan mix karein.
-Garam pani dal ker ache tarhan mix ker lein.
-Namak,chicken powder aur lemon juice dal ker ache tarhan mix karein aur darmiyani ancch per pani reduce ho janay tak paka lein (2-3 minutes).
-Hara dhania dal dein,kitchen cloth & lid sa cover ker lein aur halki ancch per 10-12 minutes kliya steam cook ker lein.
-Masala bhara mirch & fried pyaz sa garnish ker lein & matar kabab ka saath serve karein!
