Ingredients:
Kachori Dough:
- Maida (All-purpose flour) sifted 1 & ½ Cups
- Namak (Salt) ½ tsp
- Sufi cooking oil 2 tbs
- Pani (Water) ½ Cup or as required
Mava Filling:
- Sufi cooking oil 1 tsp
- Badam (Almonds) crushed 2 tbs
- Kaju (Cashew nuts) crushed 2 tbs
- Sukha nariyal (Dry coconut) grated 2 tbs
- Pista (Pistachio) crushed 2 tbs
- Jaifil powder (Nutmeg powder) ¼ tsp
- Elaichi powder (Cardamom powder) ½ tsp
- Khoya grated 100 gms
Sheera (Sugar syrup):
- Pani (Water) 1 Cup
- Hari elaichi (Green cardamom) 3-4
- Cheeni (Sugar) 1 Cup
- Sufi cooking oil for frying
Directions:
Kachori Dough:
In bowl,add all-purpose flour,salt,sufi cooking oil and mix well.
Gradually add water and knead until medium soft dough is formed.
Cover and let it rest for 30 minutes.
Mava Filling:
In frying pan,add sufi cooking oil,almonds,cashew nuts,dry coconut,pistachio,nutmeg powder, cardamom powder,mix well and cook for 2 minutes.
Add khoya,mix well and cook for 2 minutes.
Let it cool down.
Sheera (Sugar syrup):
In saucepan,add water,green cardamom and sugar,mix well and bring it to boil.
Cook until sugar is dissolved and syrup is thickened & set aside.
Take a dough and knead again and cut into equal parts.
Take a small dough,sprinkle flour and roll out with the help of rolling pin.
In the center of the dough,add khoya filling and apply water,press and seal all edges (makes 6-8).
In wok,heat sufi cooking oil and fry kachori on low flame until golden brown.
Slightly make a hole in the center of the kachori,pour prepared sugar syrup (sheera) and garnish with pistachio,almonds & serve!
Ajza:

Bowl mein maida,namak aur sufi cooking oil dal ker ache tarhan mix ker lein.
Thora thora ker ka pani shamil karein aur ghond ker medium soft dough tayyar ker lein.
Dhak dein aur 30 minutes kliya rakh dein.
Mava Filling:
Frying pan mein sufi cooking oil,badam,kaju,sukha khopra,pista,jaifil powder aur elaichi powder dal ker ache tarhan mix karein aur 2 minutes kliya paka lein.
Khoya dal ker ache tarhan mix karein aur 2 minutes kliya paka lein.
Thanda ker lein.
Sheera (Sugar syrup):
Saucepan mein pani,hari elaichi aur cheeni dal ker ache tarhan mix karein aur ubal anay dein.
Cheeni ghul janay aur sheera garha hunay tak paka lein & side per rakh dein.
Dough ko dubara ghond lein aur barabar ka parts mein cut ker lein.
Chota dough lein aur maida chirak ker rolling pin ki madad sa bail lein.
Dough ka bech mein khoya filling rakh dein aur pani laga ker tamam edges ko press ker ka seal ker dein (makes 6-8).
Karhai mein sufi cooking oil garam karein aur kachori ko halki ancch per golden brown hunay tak fry ker lein.
Kachori ka bech mein slight hole karein aur tayyar sheer dal ker pista aur badam sa garnish ker ka serve karein.
