Ingredients:
Prepare Matar Kachori:
- Matar (Peas) ½ kg
- Water 1 & ½ Cup or as required
- Cooking oil 1-2 tbs
- Pyaz (Onion) chopped 2 tbs
- Adrak (Ginger) chopped ½ tbs
- Dhania powder (Coriander powder) 1 tsp
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Namak (Salt) 1 tsp or to taste
- Zeera powder (Cumin powder) ½ tsp
- Ajwain (Carom seeds) ½ tsp
- Haldi powder (Turmeric powder) ¼ tsp
- Chaat masala ½ tsp
- Hari mirch (Green chilli) chopped 1 & ½ tbs
- Lemon juice 1 tbs
- Maida (All-purpose flour) sifted 2 & ½ Cups
- Sooji (Semolina) 1 tbs
- Namak (Salt) 1 & ½ tsp
- Cooking oil 2-3 tbs
- Lukewarm water 1 Cup or as required
- Cooking oil 2-3 tbs
- Cooking oil for frying
Prepare Paneer Tarkari:
- Cooking oil 3-4 tbs
- Pyaz (Onion) pureed 1 Cup
- Tamatar (Tomato) pureed 1 Cup
- Namak (Salt) 1 tsp or to taste
- Haldi powder (Turmeric powder) ½ tsp
- Zeera powder (Cumin powder) ½ tsp
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Chicken powder 1 tsp or Chicken cube 1
- Garam masala powder ½ tsp
- Water ½ Cup or as required
- Paneer (Cottage cheese) small cubes 250g
- Hari mirch (Green chillies) sliced 3-4
- Kasuri methi (Dried fenugreek leaves) 1 tsp
- Hara dhania (Fresh coriander) chopped 2-3 tbs
- Makhan (Butter) 1 tbs (optional)
Directions:
Prepare Matar Kachori:
In a saucepan,add peas,water & bring it to boil,cover & boil on medium flame until tender (approx. 8-10 minutes),strain & let it cool.
In a chopper,add boiled peas & chop coarsely & set aside.
In a frying pan,add cooking oil,onion & sauté for a minute.
Add ginger & mix well.
Add coarsely chopped peas & mix well.
Add coriander powder,red chilli powder,salt,cumin powder,carom seeds,turmeric powder,chaat masala,green chillies and lemon juice,mix well & cook for 2-3 minutes & let it cool.
In a bowl,add all-purpose flour,semolina,salt & mix well.
Add cooking oil & mix well.
Gradually add lukewarm water & knead until soft dough is formed,cover & let it rest it for 20 minutes.
Grease hands with oil & knead the dough again until smooth.
Divide the dough in two parts.
Take one part,roll the dough with the help of greased hands & cut small portions with the help of cutter.
Take one portion,make a ball & roll out with the help of rolling pin.
Add 1 tbs prepared pea filling in the center of rolled dough,gather all edges,press and seal then flatten & roll out gently with the help of rolling pin (makes 18).
In a wok,heat cooking oil & fry kachoris on medium low flame from both sides until golden brown.
Prepare Paneer Tarkari:
In a wok,add cooking oil,onion,mix well & cook for 2-3 minutes.
Add tomato pureed,mix well & cook for 2-3 minutes.
Add salt,turmeric powder,cumin powder,red chilli powder,chicken powder,garam masala powder,mix well & cook for 2 minutes.
Add water,mix well, cover & cook on low flame for 8-10 minutes.
Add cottage cheese & mix well.
Add green chillies,dried fenugreek leaves,fresh coriander and butter,cover & simmer on low flame for 2 minutes.
Serve matar kachoris with paneer tarkari.

Saucepan mein matar aur pani dal ker ubal lein aur dhak ker darmiyani ancch per gul janay tak boil ker lein (approx. 8-10 minutes phir strain ker ka thanda ker lein.
Chopper mein boiled matar dal ker coarsely chop ker lein & side per rakh dein.
Frying pan mein cooking oil aur pyaz dal dein aur ek minute kliya saute karein.
Adrak dal ker ache tarhan mix ker lein.
Coarsely chopped matar dal ker ache tarhan mix karein.
Dhania powder,lalmirch powder,namak,zeera powder,ajwain,haldi powder,chaat masala,hari mirch aur lemon juice dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein & thanda ker lein.
Bowl mein maida,sooji aur namak dal ker ache tarhan mix karein.
Cooking oil dal ker ache tarhan mix ker lein.
Thora thora ker ka neem garam pani shamil karein aur ghond ker soft dough tayyar ker lein aur dhak ker 20 minutes kliya rakh dein.
Haathon ko oil sa grease karein aur ghond ker smooth dough tayyar ker lein.
Dough ko do hisson mein divide ker lein.
Ek part lein aur greased haathon ki madad sa dough ko roll ker lein aur cutter ki madad sa small portions mein cut ker lein.
Ek portion lein aur ball bana ker rolling pin ki madad sa bail lein.
1 tbs tayyar matar filling ko rolled dough ka center mein dal dein aur edges ko gather ker ka press aur seal ker lein phir flat ker ka rolling pin ki madad gently roll ker lein (makes 18).
Karahi mein cooking oil garam karein aur kachori ko halki darmiyani ancch per dono sides sa golden brown hunay tak fry ker lein.
Prepare Paneer Tarkari:
Karahi mein cooking oil aur pyaz dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
Tamatar pureed dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
Namak,haldi powder,zeera powder,lal mirch powder,chicken powder aur garam masala powder dal ker ache tarhan mix karein aur 2 minute kliya paka lein.
Pani dal ker ache tarhan mix karein aur halki ancch per 8-10 minutes kliya paka lein.
Paneer dal ker ache tarhan mix ker lein.
Hari mirch,kasuri methi,hara dhania aur makhan dal ker dhak dein aur halki ancch per 2 minute kliya dum per rakh dein.
Matar kachori ko paneer tarkari ka saath serve karein!
