Ingredients:
- Chicken quarter pieces 4
- Namak (Salt) 1 & ½ tbs
- Sirka (Vinegar) 3-4 tbs
- Water 1 liter or as required
- Dahi (Yogurt) 1 & ½ Cup
- Adrak lehsan paste (Ginger garlic paste) 2 tbs
- Lal mirch powder (Red chilli powder) 1 & ½ tbs or to taste
- Dhania powder (Coriander powder) 1 tbs
- Haldi powder (Turmeric powder) 1 & ½ tsp
- Zeera powder (Cumin powder) 1 tbs
- Namak (Salt) 1 tsp or to taste
- Garam masala powder ½ tsp
- Zarda ka rang (Yellow food color) ¼ tsp or as required
- Lemon juice 2-3 tbs
- Water ¼ Cup or as required
- Cooking oil 2-3 tbs
- Koyla (Charcoal) for smoke
Directions:
Make cuts on chicken pieces with the help of knife.
In a bowl,add chicken pieces,water,salt,vinegar,mix well & rest it for 30 minutes.
In a bowl,add yogurt,ginger garlic paste,red chilli powder,coriander powder,turmeric powder,cumin powder,salt,garam masala powder,yellow food color,lemon juice & whisk well.
Take out chicken pieces from vinegar water & add in prepared marination,coat well and marinate for 15-20 minutes.
In frying pan,add marinated chicken pieces (reserve marinade for later use),water,cover & steam cook on low flame until tender (18-20 minutes) and turn sides in between.
In reserved marinade,add steam cooked chicken pieces and coat well.
How to store:
In zip lock bag,add marinated steam cooked chicken pieces & can be stored in freezer for up to 1 month.
On a grill pan,add cooking oil & grill chicken on medium high flame from all sides until done and apply cooking oil in between.
Give a charcoal smoke for 2 minutes.
Serve with raita & salad.

Chicken pieces per knife ki madad sa cuts laga lein.
Bowl mein chicken pieces,pani,namak aur sirka dal ker ache tarhan mix karein aur 30 minutes kliya chor dein.
Bowl mein dahi,adrak lehsan paste,lal mirch powder,dhania powder,haldi powder,zeera powder, namak,garam masala powder,zarda ka rang aur lemon juice dal ker ache tarhan whisk ker lein.
Chicken pieces ko sirka walay pani sa nikal lein aur tayyar marination mein dal ker ache tarhan coat ker lein aur 15-20 minutes kliya marinate ker lein.
Frying pan mein marinated chicken pieces aur pani dal ker dhak dein aur halki ancch per gul janay tak steam cook ker lein (18-20 minutes) aur bech bech mein sides turn kertay rahein aur baqi bache hoye marinade ko bad mein use kernay kliya rakh dein.
Reserved marinade mein steam cooked chicken pieces dal ker ache tarhan coat ker lein.

Zip lock bag mein marinated steam cooked chicken pieces dal dein aur 1 minth kliya freezer mein store ker saktay han.
Grill pan mein cooking oil dal dein aur chicken ko darmiyani tez ancch per tamam sides sa grill ker lein aur bech mein cooking oil laga lein.
2 minutes kliya koyla ka dhuwan dein.
